Ingredients

  • 4 large eggs
  • Cold water, enough to cover eggs
  • 3 tablespoons Japanese mayonnaise or full fat mayo
  • 1 teaspoon milk
  • 1 quarter teaspoon fine salt, plus more to taste
  • A small pinch of sugar
  • A small pinch of white pepper or black pepper
  • 4 slices soft white bread or milk bread
  • 1 to 2 teaspoons unsalted butter, softened

Instructions

  • Place the eggs in a saucepan and cover with cold water by about 2.5 cm or 1 inch.
  • Bring to a boil over medium heat, then lower to a gentle simmer and cook for 9 minutes.
  • Drain the hot water and move the eggs to cold water for at least 5 minutes so they cool and peel easily.
  • Peel the eggs and separate the yolks from the whites using your hands or a spoon.
  • Mash the yolks in a bowl until smooth, then mix in the mayonnaise, milk, salt, sugar and pepper until creamy.
  • Finely chop the egg whites and gently fold them into the yolk mixture until evenly combined.
  • Lightly butter one side of each slice of bread to help keep it soft and rich.
  • Spoon the egg mixture evenly onto two slices of bread, spreading gently to the edges
  • Top with the remaining bread slices, buttered side facing the filling then press very lightly.
  • Cut crusts off if you like, slice in half and enjoy right away for the best texture and flavour.
