SERVINGS

Ingredients

  • 18 g (about ⅔ oz) 70% dark chocolate, finely chopped
  • ½ tsp Dutch process cocoa powder
  • 10 g (2 tsp) light brown sugar, packed
  • 1 small pinch fine salt
  • ½ tsp vanilla extract
  • 50 to 60 ml (1.7 to 2 fl oz) freshly brewed espresso, about 2 shots
  • 170 ml (5¾ fl oz) whole milk
  • 1 to 1½ cups ice

Instructions

  • Finely chop the dark chocolate into very small pieces so it melts quickly and evenly.
  • Put the chopped chocolate, cocoa powder, brown sugar and salt into a heatproof glass or small jug.
  • Brew the espresso directly over the chocolate mixture while it is still very hot.
  • Stir immediately and continuously for about 20 to 30 seconds. Keep stirring until the chocolate has completely melted and the mixture looks smooth, glossy and evenly combined. There should be no visible pieces of chocolate or dry cocoa powder.
  • Stir in the vanilla extract.
  • Add about 30 ml (2 tbsp) of the milk and stir well for another 10 to 15 seconds. This cools the chocolate mixture gradually and helps prevent the melted chocolate from turning into little hard pieces when it meets the ice.
  • Fill a large glass generously with ice.
  • Pour the warm chocolate and espresso mixture over the ice.
  • Add the remaining milk and stir well for 10 to 15 seconds until the drink is evenly mixed and cold.
  • Taste before serving. If you prefer it sweeter stir in another 1 tsp (about 5 g) brown sugar. If it tastes a little too bitter another small splash of milk can help soften it.
  • Serve immediately and enjoy.
