Make cheesecake red velvet brownies that are perfectly fudgy and chewy with addictive swirls of cream cheese hiding inside. No need for any special tools and a few simple kitchen ingredients is all you need. I love baking these and sharing bite sized bars with my friends and family. The kids really love it for their pop of red colour in every brownie. We’ve shared our top tips on how to make these turn out super tasty.

Ingredients

  • Brownie batter
  • 115g unsalted butter (½ cup), melted and cooled for 5 minutes
  • 200g caster sugar (1 cup)
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • 18g unsweetened cocoa powder (3 tbsp)
  • 95g plain flour (¾ cup)
  • ¼ tsp fine salt
  • ¾ tsp white vinegar
  • 1½ to 2 tsp red gel food colouring
  • Cream cheese layer
  • 225g full fat block cream cheese (8 oz), softened
  • 65g caster sugar (⅓ cup)
  • 1 large egg
  • 1 tsp vanilla extract
  • 10g plain flour (1 tbsp)
  • Small pinch of fine salt

Instructions

  • Preheat your oven to 180°C conventional, 170°C fan or 350°F.
  • Line an 8 inch (20cm) square baking tin with baking paper leaving some overhang so the brownies are easy to lift out later.
  • Melt the butter and leave it to cool for about 5 minutes. It should be warm not hot.
  • In a large bowl whisk together the melted butter and caster sugar until smooth and glossy.
  • Whisk in the eggs one at a time until fully combined.
  • Stir in the vanilla extract, white vinegar and red gel food colouring until the batter is an even deep red colour.
  • Sift in the cocoa powder, plain flour and salt.
  • Fold everything together gently with a spatula until you can no longer see any flour. Don’t overmix. The batter should be thick and glossy.
  • Set aside about one quarter of the brownie batter in a separate bowl. This will be used for the swirl on top.
  • Spread the remaining brownie batter evenly into the prepared tin, smoothing it right into the corners with the back of a spoon or an offset spatula.
  • In a clean bowl beat the softened cream cheese until completely smooth with no lumps.
  • Add the caster sugar and beat until smooth.
  • Beat in the egg and vanilla extract until fully combined.
  • Mix in the flour and pinch of salt until the cream cheese mixture is smooth and creamy. Avoid overbeating.
  • Carefully spoon the cream cheese mixture over the brownie layer.
  • Gently spread it into one even layer covering the brownie batter completely from edge to edge.
  • Take the reserved brownie batter and add 4 generous spoonfuls over the cream cheese layer, placing one spoonful roughly in each corner of the tin, slightly away from the edges.
  • Use a butter knife or toothpick to swirl the red batter through the cream cheese layer. Make slow figure of eight and curved motions across the surface, lifting the knife every few strokes. Stop once you have a clear marbled pattern. Do not keep swirling or the colours will blend together.
  • Bake for 30 to 35 minutes until the edges are set and the centre has only a slight wobble.
  • A skewer inserted into the brownie should come out with a few moist crumbs but the cream cheese layer should look set rather than wet.
  • Leave the brownies to cool completely in the tin. Ideally give them 3 to 4 hours.
  • Chill them in the fridge for 30 to 60 minutes before slicing for the neatest layers and clean swirl pattern.
  • Lift the brownies out using the baking paper and cut into 16 squares, wiping the knife clean between each slice.
