These Japanese style udon noodles will make dinner yummy again. A quick and tasty stir fried meal that will make you feel like you’ve grabbed an Asian restaurant takeout but better! A meal you can enjoy for afternoon lunch with juicy bites of chicken and mixed peppers cooked together with thick flavourful noodles. We like making dishes like this on a busy work night and brings back memories of travels in Asia whenever we eat them.

Ingredients

  • 250g (9 oz) boneless, skinless chicken thigh, cut into small bite sized pieces
  • 400g (14 oz) fresh or frozen cooked udon noodles
  • 150g (5 oz) mixed bell peppers, thinly sliced
  • 3 spring onions, thinly sliced with the white and green parts kept separate
  • 1 small garlic clove, finely grated or very finely chopped
  • 1 teaspoon finely grated fresh ginger
  • 1½ tablespoons neutral cooking oil, such as vegetable or rapeseed oil
  • 1 tablespoon Japanese soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake, or water if you do not have sake
  • ½ teaspoon dashi powder
  • ½ teaspoon sugar
  • ½ teaspoon rice vinegar
  • ¼ teaspoon freshly ground black pepper, plus more to taste
  • 1 teaspoon toasted sesame seeds, to serve
  • 2 tablespoons bonito flakes, optional, to serve

Instructions

  • Put the soy sauce, oyster sauce, mirin, sake, dashi powder, sugar and rice vinegar into a small bowl and stir until combined. Keep this sauce ready beside the cooker.
  • If you are using frozen cooked udon, put the noodles into boiling water for about 30 to 40 seconds just until they loosen. If your packet gives different instructions follow those instead. Drain them very well. If you are using chilled cooked udon rinse it briefly under cold water to remove excess starch then drain thoroughly.
  • Pat the chicken dry with kitchen paper. This helps it brown rather than steam. Cut it into small evenly sized pieces so that everything cooks at roughly the same time.
  • Heat a large frying pan or wok over medium high heat. Use the largest pan you have because giving the ingredients plenty of room helps them brown instead of releasing water and steaming.
  • Add the oil and spread it around the pan. Add the chicken in a single layer. Leave it alone for about 2 minutes so the underside can brown, then turn the pieces and cook for another 2 to 3 minutes until golden on the outside and cooked through. If your pan is small cook the chicken in two batches rather than overcrowding it.
  • Transfer the chicken to a plate. Keeping it out of the pan for a few minutes prevents it from becoming overcooked while you cook everything else.
  • Put the pan back over the heat and add the sliced peppers and the white parts of the spring onions. Stir fry for about 2 minutes. They should become slightly softened and a little browned around the edges while still having some bite.
  • Add the garlic and ginger and cook for about 30 seconds stirring constantly. Don’t let the garlic become dark brown because it can turn bitter.
  • Add the loosened well drained udon noodles. Gently toss everything together. Let them sit against the hot pan for about 20 to 30 seconds at a time before tossing again. This gives them a chance to develop a little colour and flavour without breaking them apart.
  • Give the prepared sauce another stir then pour it around the hot edge of the pan rather than directly over one spot of the noodles. Let it sizzle for a few seconds, then toss everything together until the noodles are glossy and evenly coated. Adding the seasoning near the end keeps the sauce from becoming overly salty or watery.
  • Return the chicken and any juices from the plate to the pan. Toss everything together for about 1 minute. Just long enough to heat the chicken through and allow the sauce to coat everything.
  • Turn off the heat and taste. If it needs more savoury flavour, add a small splash of soy sauce. If it tastes rich or salty but needs lifting add a few drops more rice vinegar. If you want a little more heat add a pinch of shichimi togarashi or chilli flakes.
  • Divide the noodles between two bowls or plates. Scatter over the green parts of the spring onions and toasted sesame seeds. If you like bonito flakes finish with a small handful on each portion. The bonito flakes are a traditional and particularly good finishing touch for yaki udon.
  • Serve immediately while the udon is hot and glossy.
