Try this strawberry milkshake recipe and you’ll feel like you’ve just had dessert in a glass. So creamy and smooth with every sip tasting of sweet ‘n’ tart berries topped with whipped cream and a drizzle of chocolate syrup to make everything pop! A fun homemade shake you can make when your craving something really yummy. I love sipping these when I want something more than just ice cream. Ingredients

  • For the milkshake
  • 250 g (9 oz) fresh strawberries, hulled and quartered
  • 15 g (1 tbsp) caster sugar or granulated sugar
  • ¼ tsp vanilla extract
  • ¼ tsp vanilla extract
  • 1 very small pinch of fine salt
  • ¼ tsp fresh lemon juice, optional
  • 100 to 120 g (3½ to 4 oz) good quality vanilla ice cream
  • 150 ml (⅔ cup) cold whole milk, plus a little extra if needed
  • For the glass and topping
  • 1 to 2 tbsp chocolate syrup or chocolate sauce
  • 2 tbsp pink, white or mixed nonpareil sprinkles
  • Whipped cream, enough to generously cover the top
  • 1 fresh strawberry, optional

Instructions

  • Put the quartered strawberries in a bowl and add the sugar, vanilla extract and tiny pinch of salt. Add the lemon juice if your strawberries are very sweet or lack a little sharpness.
  • Gently mix everything together and leave the strawberries at room temperature for 20 to 30 minutes. Give them another gentle stir halfway through. The strawberries should become glossy and juicy with a little syrup collecting in the bowl. This step makes the strawberry flavour noticeably stronger so don’t skip it.
  • While the strawberries are resting place your serving glass in the fridge or freezer to chill.
  • Pour a small amount of chocolate syrup onto a small plate. Put the nonpareil sprinkles on a second plate.
  • Take the chilled glass and lightly coat only the outside edge of the rim with chocolate syrup. Immediately roll the wet rim through the nonpareils so they stick all the way around. Do not put too much chocolate on the rim, as a thin coating is enough to hold the sprinkles in place.
  • Put the decorated glass back in the fridge while you make the milkshake. This helps the chocolate firm up and keeps the sprinkles looking neat.
  • Put the strawberries and all of their syrupy juices into a blender. Blend briefly until the strawberries are mostly smooth.
  • Add the vanilla ice cream and 150 ml of cold whole milk. Blend for about 15 to 25 seconds just until the milkshake is smooth, thick and creamy. Stop as soon as everything is combined.
  • Check the consistency before pouring. It should be thick enough to feel creamy and luxurious but still pour easily. If it’s too thick add 1 tablespoon of milk and blend for a few seconds. Repeat with another tablespoon only if needed. If it is too thin add another small scoop of vanilla ice cream and blend again.
  • Taste the shake before serving. If the strawberries are particularly tart, add 1 teaspoon of sugar and blend briefly. If the flavour tastes a little flat, add the tiniest extra pinch of salt. If it tastes too sweet or heavy, add a few drops of lemon juice.
  • Pour the milkshake slowly into the chilled decorated glass, leaving enough room at the top for the whipped cream.
  • Generously top with whipped cream.
  • Drizzle a small amount of chocolate syrup over the whipped cream in a loose zigzag. Finish with a few extra nonpareils and if you like a fresh strawberry on the side of the glass.
  • Serve immediately while the milkshake is cold and creamy.
  • For the most consistent result, use cold whole milk and good quality vanilla ice cream and add extra milk only after blending. Fresh strawberries vary in sweetness so always taste the finished shake before making the final sweetness adjustment. The macerating step is particularly useful because it draws out the strawberries’ juices and intensifies their flavour, while vanilla ice cream provides thickness and creaminess without competing with the fresh fruit.
