Orange ice popsicles are fun to make and incredibly easy to make. Juice your fruits fresh and freeze them for a cold smooth ‘n’ sweet dessert that you can enjoy in the summer without the need for any heavy cream. Follow these simple tips in this recipe to see just how you can make yours turn out delicious without it tasting like a frozen ice block. Kids always seem to love the flavourful taste whenever we’ve made these.

Ingredients

  • 500 ml (2 cups) freshly squeezed orange juice, from about 6 to 8 sweet oranges
  • 75 g (⅓ cup plus 1 tbsp) caster sugar or granulated sugar
  • 30 ml (2 tbsp) water
  • 1 tsp fresh lemon juice
  • 1 small pinch of fine salt

Instructions

  • Wash and dry the oranges, then squeeze the juice. Remove any seeds and pour the juice through a fine mesh sieve into a jug to remove the coarse pulp while keeping all the fresh flavour.
  • Pour the sugar and water into a small saucepan. Warm over a medium low heat, stirring until the sugar has completely dissolved. Do not let it boil. Remove from the heat and leave to cool completely.
  • Stir the cooled syrup into the strained orange juice, then add the lemon juice and the pinch of salt. Mix gently until everything is well combined. Avoid whisking as this can add air bubbles and make the ice pops look cloudy.
  • Taste the mixture before freezing. It should taste slightly sweeter than you would normally drink because freezing softens sweetness. If your oranges are quite sharp, stir in another teaspoon or two of sugar until the flavour tastes bright and balanced.
  • Cover the jug and chill the mixture in the fridge for at least 30 minutes. Starting with a cold mixture helps the ice pops freeze more quickly, giving a smoother texture.
  • Give the mixture one gentle stir, then carefully pour it into ice pop moulds, leaving about 5 mm (¼ inch) of space at the top for expansion as they freeze.
  • Insert the sticks according to your mould instructions. Place the moulds on a flat metal baking tray if you have one, then transfer them to the coldest part of the freezer. The metal tray helps the mixture freeze a little faster, creating smaller ice crystals.
  • Freeze for at least 6 to 8 hours or overnight, until completely firm.
  • To remove the ice pops, run the outside of the moulds under cool tap water for 10 to 20 seconds. Gently pull the sticks until the ice pops release. Avoid using hot water, which can cause them to melt too quickly.
  • Enjoy straight away or wrap each ice pop individually and store in an airtight freezer bag or container for up to 1 month to keep them tasting fresh and looking bright.
