Ingredients

  • 4 medium courgettes (zucchini), about 200 to 250 g / 7 to 9 oz each
  • 500 g / 1.1 lb minced chicken
  • 200 g / 7 oz mushrooms, very finely chopped
  • 1 medium red pepper, finely chopped
  • 120 g / ¾ cup sweetcorn, drained
  • 2 garlic cloves, finely minced
  • 1 tablespoon tomato paste
  • 2 teaspoons peri peri seasoning, plus more to taste
  • ½ teaspoon chilli flakes, or less if your peri peri seasoning is already hot
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ¾ teaspoon salt, plus more for the courgettes
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil, plus a little extra for the courgettes
  • 120 g / 1 cup grated mozzarella or another good melting cheese, for the filling
  • 100 g / 1 cup grated mozzarella, mature Cheddar or a mixture, for topping
  • 25 g / ¼ cup finely grated Parmesan, optional, for topping
  • 1 teaspoon lemon juice, optional, to finish

Instructions

  • Heat the oven to 200°C fan / 400°F. Line a large baking tray with baking paper.
  • Wash the courgettes and cut them in half lengthways. Using a teaspoon carefully scoop out the soft middle, leaving about 5 to 7 mm / ¼ inch of courgette around the edges and underneath so the boats stay strong. Discard the very watery seedy centre. You want the courgettes to be sturdy enough to hold plenty of filling.
  • Put the courgette halves cut side up on the baking tray. Brush them lightly with olive oil and sprinkle them with a small pinch of salt and black pepper.
  • Bake the empty courgette boats for 12 minutes. This important first bake removes some of their excess moisture and gives you tender courgettes without turning the finished boats watery.
  • While the courgettes are baking, heat 1 tablespoon of olive oil in a large frying pan over medium high heat.
  • Add the chopped mushrooms and spread them out in the pan. Cook for 4 to 6 minutes stirring only occasionally until they have released their water and the pan is mostly dry. Letting the mushrooms brown rather than steam gives the filling much more flavour and stop it turning watery.
  • Add the chopped pepper and cook for 3 minutes until it starts to soften.
  • Add the minced chicken, breaking it up with a wooden spoon. Cook for 5 to 7 minutes stirring regularly until there is no pink chicken left and some of the chicken has started to brown.
  • Add the garlic, tomato paste, peri peri seasoning, chilli flakes, oregano, smoked paprika, salt and black pepper. Stir everything together and cook for 2 minutes. The tomato paste should become darker and coat the chicken and vegetables rather than leaving a wet sauce in the pan.
  • Stir in the sweetcorn and cook for another 1 to 2 minutes. Take the pan off the heat.
  • Taste the filling before putting it into the courgettes. This is your chance to make sure it is properly seasoned. Add a little more peri peri seasoning for extra flavour, a pinch more salt if it tastes flat or a little more chilli if you want more heat. The filling should taste bold and savoury because the courgettes will soften the overall flavour.
  • Stir 120 g / 1 cup of grated mozzarella or other melting cheese through the hot chicken mixture. This gives the filling a little creaminess and helps hold everything together without making it wet.
  • Take the courgettes out of the oven. Carefully spoon the chicken mixture into the boats, pressing it down gently so the filling reaches all the way into the ends. Don’t pile the filling excessively high because you want the cheese to stay on top rather than fall down the sides.
  • Sprinkle the remaining 100 g / 1 cup grated cheese generously over the tops. Use mozzarella for a stretchy topping, mature Cheddar for more flavour or a mixture of the two for the best balance.
  • If you like a stronger slightly nuttier cheese flavour sprinkle the optional Parmesan over the top.
  • Return the filled boats to the oven and bake for 10 to 12 minutes until the courgettes are tender, the filling is piping hot and the cheese is completely melted.
  • For a beautifully golden bubbling top switch the oven to the grill for 1 to 2 minutes at the end. Watch them closely because the cheese can brown very quickly.
  • Let the boats rest for 3 to 5 minutes before serving. If you like, finish with a very small squeeze of fresh lemon juice to brighten up the flavours with a little tang.
