A Mexican beans on toast with savoury bacon bits that makes breakfast or brunch easy while keeping it delicious for those busy mornings when you don’t know what to make. Flavoured with gentle spices and topped with parmesan cheese and fresh cilantro, best served with warm wholemeal or rustic buttered bread making this a great simple meal to make for lunch or for a lazy dinner. We used to enjoy breakfasts like this when we were in Mexico because it reminded us of home.

Ingredients

  • 4 slices wholemeal or whole wheat bread
  • 25 g butter, softened
  • 1 tbsp olive oil
  • 120 g bacon bits or finely chopped streaky bacon
  • 1 small onion, finely diced
  • 2 garlic cloves, finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp mild chilli powder or chipotle powder (adjust to taste)
  • 1 tbsp tomato paste
  • 1 x 400 g can pinto beans, drained and rinsed
  • 120 g refried pinto beans
  • 60 to 80 ml water or light stock
  • Salt and black pepper, to taste
  • Juice of 1/2 lime
  • 30 g finely grated parmesan cheese, plus extra for topping
  • Fresh cilantro, roughly chopped for garnish

Instructions

  • Put a frying pan over medium heat and add the olive oil. Add the bacon bits and cook until golden and crisp, then remove them from the pan and set aside, leaving the bacon fat behind.
  • Add the diced onion to the same pan and cook gently for 4 to 5 minutes until soft and slightly sweet. Lower the heat if needed so it does not brown.
  • Stir in the garlic, cumin, smoked paprika, oregano and chilli powder. Cook for about 30 seconds until fragrant, stirring constantly so the garlic does not burn.
  • Add the tomato paste and cook it for 1 minute, stirring well. This step deepens the flavour and removes any raw tomato taste.
  • Tip in the drained pinto beans and stir to coat them in the spiced tomato mixture. Gently mash about a quarter of the beans with the back of a spoon to start thickening the sauce.
  • Spoon in the refried beans and add the water or stock. Stir until you get a thick, glossy, spoonable sauce that looks rich rather than watery. Simmer for 4 to 6 minutes, stirring often until the beans are soft and the sauce clings to them.
  • Stir the crispy bacon back into the beans and add the parmesan. Taste, then season with salt and black pepper as needed. Finish with the lime juice and give everything a final stir.
  • While the beans are simmering, toast the bread until lightly crisp. Spread each slice generously with butter while still warm.
  • Spoon the hot beans thickly over the buttered toast. Finish with extra grated parmesan and a generous sprinkle of fresh cilantro. Serve immediately while hot and glossy.
