A Mexican beans on toast with savoury bacon bits that makes breakfast or brunch easy while keeping it delicious for those busy mornings when you don’t know what to make. Flavoured with gentle spices and topped with parmesan cheese and fresh cilantro, best served with warm wholemeal or rustic buttered bread making this a great simple meal to make for lunch or for a lazy dinner. We used to enjoy breakfasts like this when we were in Mexico because it reminded us of home.

Most traditional Mexican beans on toast, often called molletes use pinto beans or refried pinto beans because they have a creamy texture and rich flavour that melts into the bread well. Pinto beans are classic in Mexican cooking and can be cooked down with spices or you can use canned pinto beans that are drained, rinsed and thickened with olive oil or aromatics. Some people like to mix in a can of refried beans to create a saucy base that clings to the toast perfectly. Using well spiced pinto instead of plain baked beans makes the dish taste much more authentic and satisfying.
To get deep, authentic flavour in the sauce start by sautéing onion and garlic until soft, then add ground cumin, smoked paprika and mild chilli to toast the spices. Stir in tomato paste or a little salsa and cook it down briefly so it loses any raw tang. Then add the beans and some water or stock and simmer until the sauce is thick and glossy. Finish with a squeeze of lime juice and salt and pepper to balance the flavours. Adding fresh cilantro at the end brings bright freshness and makes the whole dish pop.
You can absolutely use canned pinto beans and it makes the recipe much quicker and easier. Just drain and rinse them to get rid of excess salt and packing liquid then cook them down in the pan with your spices and sauce ingredients until they’re thick and rich. If you want an even thicker creamier base you can stir in some canned refried beans or mash a portion of the beans with the back of a spoon as they cook.
Rustic sturdy breads like wholemeal, sourdough or bolillo hold up best to the hearty beans and toppings. These breads toast well and won’t go soggy too quickly when you place everything on top. Lightly buttering the toast while it’s still warm adds extra richness and flavour and helps create the perfect base for the rest.
Toppings take this dish to the next level. A sprinkle of crumbly cheese like parmesan, queso fresco or even cheddar adds salty richness. A handful of fresh cilantro adds brightness, while a squeeze of lime gives acidity that balances the rich beans. Some people also enjoy adding salsa, avocado slices, jalapeños or a fried egg for extra texture and flavour. We really enjoy having fried eggs on top or on the side whenever we make this meal for a little extra protein.
Cooking the beans until the sauce thickens and most of the liquid reduces helps keep the toast crisp longer. Start with warm buttered toast and make sure your beans are rich and clingy. If the sauce is too thin, simmer it longer so it becomes thick and glossy. Some people pour off a little excess bean juice before spooning them on top. Also, putting them on right before eating keeps the crunch in the toast.
