Most definitely! Food is a very individual thing and we all have certain preferences. You can use plain flour tortillas or more traditional corn flour tortillas to get super yummy crispy baked taco’s. Choose and use whichever you prefer.
Tortillas made from corn Flour have a lower GI (Glycemic Index) compared to plain white flour based ones. If you’re thinking to make these more often or wish to have something more healthy then you may want to use corn flour tortillas as these will result in a slower release of Insulin. They also have more complex carbs and fiber from the corn which is what helps to slow down it’s absorption.
Canned black beans tend to be pre-cooked so it’s perfectly fine if you want to blend them up instead with your desired seasonings if your in a rush. They’ll be baked in the oven anyway so that will allow them to cook out more properly. You can either keep the onions and pepper raw for more crunchiness or simply blend them up with the beans in your blender before adding everything into the tacos.
You sure can! But remember to cook them before baking them if you don’t have any black beans around you. You could use pinto beans for the most authentic replacement as they taste great and used as a staple in Mexican refried beans. Kidney beans (red or light) also makes a good substitute as it results in a firmer bite and holds up to stronger spices well too. Cannellini beans are another good replacement you can use if you want the other savoury ingredients like the onions and peppers to shine more and also gives a creamy, mild nutty type of flavour which works well in this recipe too.
They are If you use corn flour tortillas instead of plain white flour ones then this yummy Mexican cuisine will be gluten free. Be sure to check the labels of any packaged ingredients you use though just to be sure.
Fully assembled tacos are safe and good to eat for 3 days in the fridge. If you store the cooked bean filling separately from the tortillas and toppings in a sealed container, it will last a full 5 days. Make sure to let it cool down before putting it away, and when you reheat it, heat it thoroughly until it's steaming hot all the way through. You can also freeze the plain filling for up to 3 months.
