One of the most popular Italian cocktails around that combines a bubbly and bright glass that looks super fancy yet is so easy to make and even more fun to drink. This brings back memories of when we first tasted this on vacation in Italy on a beautiful hot day.

The classic aperol spritz is made with three parts chilled Prosecco, two parts aperol and one part soda water, served over plenty of ice with a fresh orange slice. This balance keeps it bright, bubbly and easy to drink.
For one drink, a good rule of thumb is about 50 ml of aperol in the classic mix with 75 ml prosecco and a splash of soda water. This ratio gives you the bittersweet flavour the drink is known for without overwhelming the fizz.
Yes if you don’t have prosecco on hand you can use another dry sparkling wine of similar style or even sparkling water for a lighter version. Sparkling wine keeps the bubbles lively while soda water keeps it refreshing.
A premium club soda is ideal because it adds fizz without extra flavour but plain sparkling water works well too. Just keep the soda amount light so the mix doesn’t get too diluted. We learnt this tip during our time in Italy where we first tried this recipe.
Yes use plenty of ice to chill the drink right away. Cold ice melts slower and keeps your spritz crisp longer without watering it down. Starting with chilled ingredients also helps maintain the temperature.
A large balloon wine glass or similar big wine glass is perfect because it gives room for ice, fizz and garnish, making the drink look as good as it tastes.
An aperol spritz tastes more bittersweet than sugary sweet. The prosecco’s dry hints and soda’s pop balance the aperol’s herbal and citrus notes for a refreshing result. This combination of flavours is what makes everything taste beautiful.
It pairs wonderfully with light snacks before a meal especially Italian cicchetti like olives, cheese, small bites of seafood or cured meats. These small flavours complement the drink well without overpowering it.
