Ingredients

  • 60 ml (2 fl oz) bourbon
  • 22 ml (¾ fl oz) freshly squeezed lemon juice
  • 20 ml (¾ fl oz) simple syrup
  • 15 ml (½ fl oz) egg white or aquafaba, optional
  • 2 dashes Angostura bitters
  • Ice
  • 1 orange or lemon peel, for serving
  • 1 cocktail cherry, optional

Instructions

  • If using fresh lemons, squeeze the juice just before making the drink. Strain out any seeds or large pieces of pulp.
  • Add the bourbon, lemon juice, simple syrup and bitters to a cocktail shaker. If using egg white or aquafaba, add it now.
  • If using egg white or aquafaba, close the shaker and shake it hard without ice for about 10 seconds. This helps create the smooth frothy texture. If you are not using either simply move on to the next step.
  • Fill the shaker generously with ice, close it securely and shake hard for about 15 seconds until the outside of the shaker feels very cold.
  • Fill a rocks glass with fresh ice.
  • Strain the drink into the glass. If you used egg white or aquafaba, pour slowly and use a fine strainer if you have one to give the drink an especially smooth, even foam.
  • Let the frothy top settle for a few seconds, then gently express the orange or lemon peel over the surface by holding it over the drink and giving it a firm squeeze. Rub the peel around the rim and place it in the glass.
  • If you like, finish with a cocktail cherry.
  • Take a sip before making another one. If your lemon was particularly sharp you can increase the simple syrup slightly next time. If it tastes too sweet reduce the syrup slightly. The goal is a refreshing balance between sweet, tart and bourbon.
