The secret is the cooking method. Korean fried wings are usually coated in potato starch, then fried twice. The first fry cooks the chicken through while the second fry creates a thin crunchy coating that stays crispy even after it's coated in sauce. Drying the wings well before coating them also helps achieve that signature crunch.
Traditional Korean wing sauce is made with gochujang, soy sauce, garlic, a sweetener such as rice syrup or honey and a little rice vinegar for balance. Many versions also include fresh ginger and a small amount of gochugaru for extra heat. The result is a sticky sauce that's sweet, savoury, spicy and packed with garlicky flavour.

When you're ready to serve, fry them a second time until crispy, warm the sauce and toss everything together just before eating. This gives you the freshest flavour and the crispiest texture. That depends on how much gochujang and gochugaru you use. Gochujang has a gentle warmth with a slightly sweet flavour while gochugaru adds a cleaner chilli kick. If you prefer milder wings, simply reduce the gochugaru. If you enjoy extra heat, add a little more until the spice level is just right without overpowering the garlic and savoury flavours.
