Enjoy this homemade strawberry yogurt parfait that’s so easy to make for a fancy looking result. An elegant summer dessert that has aesthetic layers of crunchy granola topped with a layer of creamy Greek yogurt topped with a strawberry jam with fresh pieces of fruit inside of it that’s just sweet enough to make this taste like a real breakfast treat. This sweet dish always gets compliments from all our guests when we make this during berry season for it’s looks and taste.

Ingredients

  • 300 g fresh strawberries about 2 cups hulled and chopped
  • 50 g granulated sugar about 1/4 cup
  • 1 tsp lemon juice optional but recommended
  • 450 g full fat Greek yogurt about 2 cups
  • 3 to 4 tbsp runny honey adjust to taste
  • 1/2 tsp vanilla extract optional
  • 200 g crunchy granola about 2 cups preferably with clusters
  • Extra fresh strawberry slices for topping
  • Extra honey for drizzling optional

Instructions

  • Place the chopped strawberries, sugar and lemon juice into a small saucepan and stir well.
  • Set the pan over medium heat and cook for 10 to 15 minutes, stirring often until the strawberries soften and the mixture thickens. You should still see some strawberry pieces and the jam should look glossy and spoonable but not watery.
  • Remove the jam from the heat and let it cool for about 10 minutes so it thickens slightly more as it cools.
  • While the jam cools, add the Greek yogurt, honey and vanilla extract to a bowl and stir until smooth and evenly sweetened. Taste and add a little more honey if needed. The yogurt should be thick and creamy, not runny.
  • To assemble, spoon a generous layer of granola into the bottom of each glass.
  • Add a thick layer of sweetened Greek yogurt on top of the granola, spreading it gently to cover the granola completely.
  • Spoon a layer of the strawberry jam over the yogurt, keeping most of the jam away from the sides of the glass for neat layers.
  • Add another layer of yogurt on top of the jam.
  • Finish with more granola, fresh strawberry slices and a light drizzle of honey if desired.
  • Serve immediately for the best crunch and texture. If preparing ahead, keep the granola separate and add it just before serving to keep it crisp.
