A strawberry yogurt parfait is a layered dish made with creamy yogurt, sweet strawberries and crunchy granola. The layers create a balance of texture and flavour that works great as a breakfast, snack or light dessert and people love how fresh and bright it tastes.
Yes you can use pretty much any yogurt you enjoy however we've found from our tests that thick Greek yogurt holds up best and gives a rich creamy layer but plain or vanilla yogurt works too. If you prefer dairy-free, coconut or almond yogurts are great alternatives. Just choose a style you like and add a little honey or sweetener if the yogurt isn’t sweet enough on its own.
No you don’t have to cook them unless you want a jam or compote layer. Fresh strawberries can be sliced and layered straight in for bright texture, or you can macerate them with a bit of sugar to soften and sweeten them before adding to your parfait. Cooking strawberries into a quick compote or jam adds even more flavour which is why we recommend this method.
A pro tip is to keep granola crunchy add it right before serving rather than letting it sit too long with the yogurt or fruit juices. Putting a thick layer of yogurt between the granola and juicy fruit also helps slow down sogginess. If you are preparing ahead of time, keep the granola in a separate container and top each parfait just before eating. This is what we always do for the perfect texture.
You can prepare the fruit and yogurt ahead of time but it’s best to add the granola only when you are ready to serve so it stays crisp. If left together in the fridge for too long the granola at the bottom will soften from the moisture of the fruit and yogurt.
Strawberries are a summer classic but you can mix in blueberries, raspberries, peaches or sliced bananas for extra flavour too. Toppings like toasted nuts, coconut flakes, a drizzle of honey or a sprinkle of citrus zest lift the whole dessert and give extra texture and taste. We love making different versions of this depending on what kind of fruit is available in season and people always love it because it's great to enjoy as a sweet breakfast too.
