Ingredients

  • Homemade caramel sauce (makes about 250 ml)
  • 200 g (1 cup) white caster sugar or granulated sugar
  • 60 ml (¼ cup) water
  • 120 ml (½ cup) double cream or heavy cream, warmed
  • 40 g (3 tbsp) unsalted butter, softened
  • ½ tsp vanilla extract
  • ¼ tsp fine sea salt
  • For the iced caramel latte
  • 2 shots espresso (about 60 ml or 2 fl oz), freshly brewed
  • 2 tbsp (30 ml) homemade caramel sauce, plus extra for drizzling
  • ¼ tsp vanilla extract (optional but recommended)
  • 200 ml (¾ to 1 cup) cold whole milk or full fat milk
  • Ice cubes
  • 60 ml (¼ cup) double cream or heavy cream
  • 1 tsp icing sugar or powdered sugar (optional, for the whipped cream)

Instructions

  • Add the sugar and water to a small saucepan over medium heat. Do not stir once it begins heating. Gently swirl the pan occasionally until the sugar has completely dissolved and turns a deep golden amber colour.
  • Remove the pan from the heat and slowly pour in the warmed cream while whisking carefully. The mixture will bubble up vigorously, so pour slowly.
  • Whisk in the butter until melted and smooth, then stir in the vanilla and sea salt.
  • Leave the caramel sauce to cool until warm. It should be thick enough to coat the back of a spoon but still pour easily. Once completely cool, it will thicken further.
  • Pour the double cream into a bowl and whisk until it forms soft peaks. If using, whisk in the icing sugar for a lightly sweetened topping. Keep chilled until needed.
  • Brew two fresh shots of espresso into a heatproof cup
  • Immediately stir the caramel sauce and vanilla extract, if using, into the hot espresso. Whisk for about 20 seconds until smooth and lightly frothy. Mixing the caramel into the hot coffee helps it dissolve completely and creates a silky coffee layer.
  • If you would like a café style presentation, drizzle a little caramel sauce around the inside of a tall serving glass.
  • Fill the glass about three quarters full with ice cubes.
  • Pour in the cold milk.
  • Slowly pour the frothed caramel espresso over the milk. Pouring gently helps create a distinct coffee layer through the middle of the drink.
  • Spoon the freshly whipped cream over the top.
  • Finish with a generous drizzle of caramel sauce over the whipped cream.
  • Serve immediately with a straw and a long spoon so everyone can enjoy the drink layered or stirred together.
