We all feel lazy during the holiday season. This easy no bake Christmas Cookie dessert recipe idea is perfect for when your craving something special and sweet for the holidays but don’t have the energy to bake. With a Tiramisu inspired layer of biscuits wrapped up with nutty chocolate these taste dreamy and creamy.

Ingredients

  • 24 ladyfingers (sponge fingers)
  • 250g (1 cup) mascarpone cheese or cream cheese, room temperature
  • 1½ tbsp icing sugar (powdered sugar)
  • 1 tsp vanilla extract or ½ tsp coffee extract
  • 60ml (¼ cup) cooled brewed coffee (for dipping)
  • 300g (10 oz) milk or dark chocolate, chopped
  • 1 tbsp coconut oil or neutral oil
  • 75g (½ cup) finely chopped toasted hazelnuts, almonds or mixed nuts

Instructions

  • In a bowl, stir together mascarpone, icing sugar and vanilla (or coffee extract) until smooth and creamy.
  • Spread a generous teaspoon of this filling on the flat side of a ladyfinger, then sandwich another one on top, pressing gently so it holds together.
  • Pour the cooled coffee into a shallow dish. Quickly dip each ladyfinger sandwich into the coffee for just one second on each side. Don’t soak them, they should stay firm.
  • Place the dipped sandwiches on a tray lined with baking paper. Freeze for about 1 hour or until firm.
  • When ready to coat, melt the chocolate and coconut oil together in a heatproof bowl over a pan of simmering water or in short microwave bursts, stirring until smooth.
  • Stir the chopped nuts into the melted chocolate.
  • Remove the frozen sandwiches from the freezer and, using a fork, dip each one into the chocolate mix until fully coated. Tap off any extra chocolate and place back on the lined tray.
  • Chill in the fridge for 20 minutes or until the chocolate is set.
