Yes. This recipe is made using the no churn method so there's no need for an ice cream machine. Whipping the cream adds air to the mixture which helps create a light and creamy texture as it freezes. The result is rich 'n' smooth dessert with very little effort.
Ice crystals usually form when there is too much water in the mixture or when the ingredients are overmixed. Using full fat cream, sweetened condensed milk and good quality chocolate all help create a smoother texture. Covering the surface before freezing and allowing the ice cream to soften for a few minutes before scooping also makes a big difference.
For the best texture, freeze the ice cream for at least 8 hours or overnight. While it may seem firm after a few hours, giving it plenty of time allows it to freeze evenly and become much easier to scoop and enjoy.
You can but using both gives the best results. Cocoa powder brings a deep chocolate flavour and a darker colour while melted dark chocolate adds richness and a smoother creamier texture. Combining the two creates a more balanced and indulgent chocolate ice cream than using either one on its own. Home made chocolate ice cream is best enjoyed within 2 weeks when stored in an airtight container. Pressing baking paper or cling film directly onto the surface before covering the container helps reduce ice crystals and keeps the texture as creamy as possible. While it will still be safe to eat after that, the flavour and texture are at their best during the first couple of weeks.
