Ingredients

  • 2 large chicken breasts, about 650 to 700 g (1½ lb)
  • 60 g (½ cup) plain flour or all purpose flour
  • 20 g (¼ cup) finely grated Parmigiano Reggiano or Parmesan, for mixing with the flour
  • 1 teaspoon fine salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder (optional)
  • 2 tablespoons olive oil
  • 15 g (1 tablespoon) unsalted butter
  • For the sauce
  • 120 ml (½ cup) dry white wine
  • 120 ml (½ cup) good quality chicken stock
  • 2 to 3 tablespoons freshly squeezed lemon juice, from 1 lemon
  • 2 tablespoons capers, drained
  • 60 g (4 tablespoons) cold unsalted butter, cut into cubes
  • 2 tablespoons finely chopped fresh flat leaf parsley
  • Lemon slices, for serving

Instructions

  • Slice each chicken breast in half horizontally to make four thin cutlets. Place between two sheets of baking paper or cling film and gently pound until each piece is about 1 to 1.5 cm (½ inch) thick. This helps the chicken cook evenly and stay juicy.
  • Pat the chicken dry with kitchen paper. Season both sides with the salt, pepper and garlic powder if using. Leave for 10 to 15 minutes while you prepare the remaining ingredients.
  • Mix the flour and grated Parmigiano Reggiano in a shallow dish. Coat each piece of chicken lightly, then gently shake off any excess flour. A thin coating gives the best colour and keeps the sauce silky.
  • Heat the olive oil and 1 tablespoon of butter in a large frying pan over a medium to medium high heat.
  • Cook the chicken for 3 to 4 minutes on the first side until golden brown. Turn over and cook for another 2 to 3 minutes until just cooked through. Cook in batches if needed so the pan is not overcrowded. Transfer the chicken to a plate and keep warm.
  • Pour the white wine into the same pan and use a wooden spoon to scrape up any browned bits from the bottom. Let the wine simmer for 2 to 3 minutes until reduced by about half.
  • Pour in the chicken stock and simmer for another 2 to 3 minutes until the sauce has reduced slightly.
  • Stir in 2 tablespoons of the lemon juice and the capers. Taste the sauce. If you would like a brighter lemon flavour, add the remaining tablespoon of lemon juice a little at a time until it tastes balanced. The sauce should be buttery with a gentle fresh lemon flavour rather than overly sharp.
  • Reduce the heat to low. Add the cold butter one cube at a time, stirring until each piece has melted before adding the next. This creates a smooth, glossy sauce that coats the chicken beautifully.
  • Stir through most of the chopped parsley, saving a little for garnish.
  • Return the chicken to the pan and spoon the sauce over each piece. Warm gently for 1 to 2 minutes. Avoid letting the sauce boil once the butter has been added.
  • If using the optional cheese sprinkle it evenly over the chicken, cover the pan with a lid for about 1 minute and allow it to melt gently.
  • Spoon plenty of the lemon butter sauce and capers over the chicken. Finish with the remaining parsley and serve with fresh lemon slices.
