The chicken burger bowl is a perfect lazy dinner or lunch idea for when you need something quick and tasty. We loved making these before they went viral all over social media. A plate that combines crispy pieces of chicken and French fries with melted cheese, fresh lettuce and cherry tomatoes before getting covered with chopped pickles. Topped with a garlic mint mayo and bbq sauce for a touch of smokey flavour.

Ingredients

  • 250 to 300 g (9 to 10½ oz) frozen French fries
  • 3 slices American processed cheese
  • 1 breaded chicken steak, about 95 g (3½ oz)
  • 1 generous handful iceberg lettuce, finely chopped
  • 5 to 6 cherry tomatoes, quartered and the watery centres squeezed out
  • 2 to 3 dill pickles, finely chopped and patted dry
  • 1½ to 2 tablespoons garlic mint mayonnaise
  • 1 tablespoon BBQ sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • Start by preparing all the cold ingredients before cooking anything. Finely chop the lettuce and put it aside. Quarter the cherry tomatoes, then gently squeeze out as much of the watery centre as you can without crushing the tomato completely.
  • Finely chop the pickles and pat them dry with kitchen paper. Keeping excess moisture out of the bowl helps the fries stay crisp.
  • Cook the breaded chicken steak according to the packet instructions but aim for a deep golden and properly crisp coating. An air fryer or oven works well.
  • When the chicken is cooked, take it out and leave it alone for 1 to 2 minutes. Do not cut it straight away. This gives the coating a chance to firm up and helps keep the inside juicy.
  • Cut the whole chicken steak into roughly 2 cm (¾ inch) bite sized pieces just before assembling the bowl.
  • While the chicken is cooking, cook the fries until they are very crisp and deep golden. Give them plenty of space on the tray or in the air fryer basket so they cook rather than steam. If using an oven, spreading them in a single layer is important. For frozen fries cook them for the longer end of the packet’s recommended time if necessary to get them properly crispy.
  • When the fries are ready, immediately season them with a small pinch of salt and a good amount of freshly ground black pepper. Go lightly with the salt because the cheese, chicken, pickles and BBQ sauce will all add more salt.
  • Put the hot fries into your serving bowl and spread them out so there is plenty of surface area for the cheese.
  • Lay all 3 slices of American cheese over the hot fries. Let the heat from the fries soften the cheese, then place the bowl under a hot grill for a very short time, or use another safe method of gently melting the cheese. Watch it closely and stop as soon as the cheese is soft and melted. You want gooey melted cheese over the fries, not cheese that has separated into oil.
  • Immediately scatter the crispy chicken pieces over the melted cheese. Spread them around the bowl rather than leaving them in one pile so you get chicken with the fries in almost every bite.
  • Add the chopped lettuce, squeezed cherry tomatoes and finely chopped pickles over the chicken. Keep the lettuce and vegetables on top rather than underneath the hot fries so they stay fresh and crunchy.
  • Drizzle the garlic mint mayonnaise over the whole bowl in thin lines. Use enough to give you creamy sauce throughout the bowl without completely covering everything.
  • Drizzle the BBQ sauce over the top in thinner lines. The BBQ sauce should add a sweet, smoky flavour rather than turn the bowl into a sticky sauce covered dish.
  • Finish with another small grind of black pepper. Taste before adding any more salt.
  • Serve immediately while the fries are still crisp, the cheese is melted, the chicken is crunchy and the lettuce and pickles are cold and fresh.
