A chicken Caesar salad typically has crisp romaine lettuce, juicy cooked chicken, crunchy croutons and a creamy Caesar dressing made with lemon, garlic, Parmesan and Worcestershire or anchovy flavour, all tossed together with Parmesan on top.
To make a great homemade Caesar dressing mix garlic, lemon juice, mustard and Worcestershire sauce with mayonnaise (or anchovy paste if you like), then stir in Parmesan and a bit of olive oil until smooth.
Yes, you can skip anchovies or use Worcestershire sauce, capers or anchovy paste instead. They give that salty umami depth without tasting fishy if used in small amounts.
Romaine lettuce is the classic choice because it stays crisp and sturdy under dressing and chicken, making every bite fresh and crunchy.
You can lighten it by using grilled chicken, swapping some mayonnaise for plain Greek yogurt and adding more veg like cherry tomatoes or cucumber while keeping the classic flavours intact.
Toss the lettuce with just enough dressing to coat lightly, add croutons right before serving and keep the cooked chicken and dressing separate until you’re ready to eat.
If stored properly with the dressing apart, your chicken Caesar salad can last up to 2–3 days though it’s best eaten fresh to keep the lettuce crisp.
