Vietnamese coconut coffee locally called cà phê cốt dừa is a bold drink made with strong Asian style coffee combined with a creamy coconut slushy made from coconut milk or cream and sweetened condensed milk. The result is richer sweeter and more indulgent than a standard iced coffee with a tropical coconut flavour balanced by the strong coffee.
To make it authentically, brew strong coffee using a Vietnamese phin filter or espresso then blend full-fat coconut milk or cream with sweetened condensed milk and ice until thick and frothy. Pour the coffee into a glass and top it with the coconut slush. Stir gently before drinking so the flavours mingle.
The best choice is robusta beans brewed strong, ideally with a phin filter. Robusta’s bold, chocolatey bitterness cuts through the sweet creamy coconut mix better than lighter coffees. If you don’t have a phin then a double espresso or a strong brewed dark roast will still work well too.
Yep. A phin filter is traditional but you can use espresso or a strong French press brew instead. Just aim for coffee that’s strong and bold so it stands up to the sweetness and richness of the coconut layer.
Use full-fat coconut milk or coconut cream rather than thin coconut water or light milk. Blending it with ice and sweetened condensed milk until it’s thick and snowy gives you that rich, velvety texture you find in Vietnamese cafés. Many people find coconut cream gives the most authentic tropical flavour. We could always taste the difference when we had this drink in local cafes with or without the condensed milk. It really adds another dimension of depth into every sip so it's highly recommended.
Sweetness is personal but traditional recipes use sweetened condensed milk as the main sweetener. Start with a moderate amount and taste as you go. You can always add a bit more if you want it sweeter. The goal is to balance, not too sickly sweet but sweet enough to complement the strong coffee and creamy coconut flavours. Yes. Swap the sweetened condensed milk for a coconut condensed milk or a plant-based condensed milk alternative. You’ll still get the rich coconut flavour and sweetness but without dairy making the drink suitable for vegan diets.
