Ingredients

  • 200 g or 7 oz dried spaghetti or fettuccine
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • 120 ml or 1/2 cup double cream or heavy cream
  • 30 g or 1/3 cup freshly grated Parmesan cheese, plus extra to serve
  • Salt, to taste
  • Black pepper, to taste
  • 1 to 2 tsp good quality truffle oil, to taste
  • Optional: 60 g or 2 oz crispy bacon or pancetta, chopped
  • Optional: a small handful of mushrooms, finely chopped
  • Optional: chopped parsley, to finish

Instructions

  • Bring a large pot of water to a boil, add plenty of salt then cook the pasta until just tender; before draining, scoop out about 120 ml or 1/2 cup of the pasta water and set it aside.
  • If using bacon or pancetta, cook it in a wide pan over medium heat until crisp, then remove and set aside leaving the fat in the pan.
  • Add butter and olive oil to the same pan, then gently cook the garlic over low to medium heat for about 30 seconds until fragrant but not browned.
  • If using mushrooms, add them now and cook for 3 to 4 minutes until soft and lightly golden.
  • Pour in the cream, stir well and let it gently simmer for 2 to 3 minutes until slightly thickened.
  • Add the drained pasta to the sauce along with a splash of the reserved pasta water, tossing gently so the sauce coats the pasta evenly.
  • Stir in the Parmesan, season with salt and black pepper and add more pasta water a little at a time if needed to keep the sauce creamy and smooth.
  • Remove the pan from the heat then drizzle in the truffle oil and gently toss so the flavour stays fresh and aromatic.
  • Taste and adjust seasoning if needed, then serve immediately topped with crispy bacon if using, extra Parmesan and a little parsley if you like.
