We combined rainbow tortellini’s with freshly chopped up simple summer salad topped with a sprinkle of cheese for added savoury depth. Ingredients

  • 250 g or 9 oz rainbow coloured tortellini, vegan if needed
  • 1 small romaine or cos lettuce, washed and chopped
  • 200 g or 7 oz cherry tomatoes, halved
  • 1 small cucumber, diced
  • A small handful fresh basil leaves, torn
  • 2 to 3 tablespoons sliced olives, optional
  • 40 g or 1.5 oz vegan mozzarella style pearls or vegan feta, crumbled
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  • Bring a large pot of water to a rolling boil and add a generous pinch of salt. The water should taste lightly salty.
  • Add the tortellini and cook according to the packet instructions until just tender. Do not overcook.
  • Drain the tortellini immediately and rinse under cold running water until fully cool. Shake well to remove excess water.
  • While the pasta cools, place the chopped lettuce, cherry tomatoes, cucumber and olives if using into a large serving bowl.
  • In a small bowl, whisk together the olive oil, red wine vinegar or lemon juice, Dijon mustard, a pinch of salt and a few turns of black pepper until smooth.
  • Add the cooled tortellini to the salad bowl and pour over about two thirds of the dressing.
  • Gently toss everything together so the pasta and vegetables are evenly coated.
  • Tear the basil leaves over the salad and toss once more.
  • Taste and add more dressing, salt or pepper if needed.
  • Finish by sprinkling the vegan cheese over the top just before serving.
  • Serve immediately or chill for up to one hour for a slightly cooler, more blended flavour. If chilling longer, add a small drizzle of olive oil and a pinch of salt before serving to refresh the salad.
