Yes! The best way is to bake the tart shell a day ahead and store it in an airtight container once it has cooled completely. You can also make the mascarpone cream the day before and keep it chilled. Assemble the tart a few hours before serving, then add the berries just before serving if possible. This helps keeps the pastry crisp and the fruit looking fresh.
A soggy crust is usually caused by an under baked tart shell or wet fruit. Bake the pastry until it is evenly golden brown not pale, then let it cool completely before adding the filling. After washing the strawberries and blueberries, dry them thoroughly with kitchen paper. If you are making the tart in advance wait until closer to serving before adding the fruit. This is one of the reasons we recommend blind baking it for a while to help prevent this. It's a rookie mistake that many people make when baking pies.
Fresh berries are the best choice for this tart. Frozen berries release a lot of liquid as they thaw which can make the cream watery and soften the pastry. If frozen berries are all you have, they are better used in a cooked berry sauce rather than as the fresh topping.
Start with very cold mascarpone and very cold whipping cream. Mix the mascarpone until smooth before adding the cream, then whisk only until the filling holds soft peaks. Stop as soon as it is thick enough to spread. Over mixing can make the mascarpone grainy or cause the filling to lose its smooth texture. Chilling the finished tart for at least an hour also helps the filling firm up beautifully.
A fresh berry tart is at its very best on the day it is made. Leftovers can be covered and refrigerated for up to 2 days. The flavour will still be delicious but the berries will soften and the pastry will gradually lose some of its crispness. For the freshest texture enjoy it within the first 24 hours.
Mascarpone pairs beautifully with strawberries and blueberries because its rich, creamy flavour balances their natural sweetness and slight tartness. It also works wonderfully with raspberries, blackberries, cherries, peaches and fresh figs. A little vanilla and lemon zest in the filling helps bring out the flavour of almost any fresh summer fruit without overpowering it.
