Ingredients

  • 450 g or 1 lb fresh strawberries, washed, hulled and sliced in halves or thick slices
  • 75 g or 3 oz kataifi pastry, finely loosened
  • 30 g or 2 tablespoons unsalted butter
  • 120 g or 1/2 cup pistachio cream or sweet pistachio paste
  • 150 g or 5 oz good quality milk chocolate, chopped
  • 30 g or 1 oz dark chocolate, optional but recommended for balance
  • 1/4 teaspoon fine salt
  • 25 g or 2 tablespoons chopped pistachios, for topping

Instructions

  • Place the kataifi pastry on a cutting board and gently pull it apart with your fingers so the strands are loose and short.
  • Melt the butter in a wide pan over medium low heat.
  • Add the kataifi and stir constantly for 5 to 7 minutes until evenly golden and crisp, taking care not to let it brown too quickly.
  • Transfer the toasted kataifi to a plate lined with paper towel, sprinkle with the salt and let it cool completely.
  • Once cooled, mix the kataifi with the pistachio cream until evenly coated and set aside.
  • Place the milk chocolate and dark chocolate in a heatproof bowl and melt gently in the microwave in 20 second bursts, stirring each time until smooth.
  • If the chocolate feels thick, stir in half a teaspoon of butter or neutral oil to loosen it slightly.
  • To assemble, spoon a layer of strawberries into the bottom of each clear serving cup.
  • Add a generous layer of the pistachio kataifi mixture, pressing very lightly so it stays fluffy.
  • Drizzle a spoonful of melted chocolate over the layer.
  • Repeat the layers once more, finishing with strawberries on top.
  • Drizzle more chocolate over the top and sprinkle with chopped pistachios.
  • Serve immediately while the kataifi is crisp and the chocolate is glossy for the best texture and appearance.
