With crispy pieces of juicy fried chicken in a bed of mixed iceberg lettuce with sliced onions and cherry tomatoes covered with a delicious home made chipotle mayo sauce to finish it off. This is one of those lazy meals that upgrades boring summer salads into something special.

Ingredients

  • For the crispy chicken
  • 2 medium chicken breasts, cut into bite size pieces
  • ½ cup (65g) plain flour
  • ½ cup (60g) cornflour or cornstarch
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 large egg
  • 2 tbsp milk
  • Oil for frying or cooking spray for air fryer
  • For the chipotle mayo
  • ½ cup (120g) mayonnaise
  • 1 to 2 tbsp chipotle peppers in adobo sauce, finely chopped
  • 1 tbsp lime juice (fresh is best)
  • ½ tsp garlic powder
  • Salt to taste
  • For the salad bowl
  • 3 to 4 cups chopped iceberg lettuce
  • ½ small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • Extra lime wedges for serving (optional)

Instructions

  • Start by making the sauce: mix the mayonnaise, chopped chipotle peppers, lime juice, garlic powder with a small pinch of salt in a bowl until smooth. Taste and adjust heat or lime if needed, then refrigerate while you cook the chicken.
  • In a bowl, mix the flour, cornflour, smoked paprika, garlic powder, salt and pepper. In a separate bowl whisk the egg with the milk.
  • Pat the chicken pieces dry with kitchen paper. Dip each piece into the egg mixture, then coat well in the flour mixture, pressing lightly so it sticks.
  • To deep fry: Heat oil in a pan to medium hot. Fry the chicken in batches for 3 to 4 minutes until golden and crispy. Remove and drain on kitchen paper.
  • To air fry: Preheat air fryer to 200°C / 400°F. Lightly spray the basket with oil. Arrange chicken in a single layer, spray the tops lightly with oil and air fry for 10 to 12 minutes, shaking halfway, until golden and cooked through.
  • While the chicken cooks, place the lettuce, sliced onion and cherry tomatoes in a large bowl. Toss lightly with a squeeze of lime and a small pinch of salt to keep everything fresh and crisp.
  • Assemble the bowls by dividing the salad between plates, topping with hot crispy chicken and drizzling generously with the chipotle mayo sauce.
  • Serve immediately so the chicken stays crispy and enjoy right away.
