Ingredients

  • Pizza Dough
  • 320 g / 2½ cups strong bread flour or all purpose flour
  • 7 g / 2¼ tsp instant or active dry yeast
  • 200 ml / ¾ cup plus 1 tbsp warm water
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1 tsp salt
  • Alfredo Sauce
  • 30 g / 2 tbsp butter
  • 2 cloves garlic, finely minced
  • 180 ml / ¾ cup double cream or heavy cream
  • 30 g / ⅓ cup finely grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Toppings
  • 120 to 150 g / 1 cup cooked chicken breast, diced or shredded
  • 80 g / 1 cup mushrooms, thinly sliced
  • 150 g / 1½ cups shredded mozzarella cheese
  • To Finish
  • Dried oregano
  • Chilli flakes
  • Olive oil for brushing

Instructions

  • Add the warm water, sugar and yeast to a large bowl, stir gently and leave for 5 minutes until lightly foamy.
  • Add the flour, salt and olive oil and mix until a rough dough forms.
  • Knead by hand on a lightly floured surface for about 6 to 8 minutes until smooth, soft and slightly elastic.
  • Place the dough in a lightly oiled bowl, cover and let rise in a warm place until doubled in size, about 1 to 1½ hours.
  • While the dough rises, melt the butter in a small pan over medium low heat.
  • Add the garlic and cook for 30 seconds until fragrant but not browned.
  • Pour in the cream and gently simmer for 3 to 4 minutes until slightly thickened.
  • Stir in the Parmesan, season lightly with salt and black pepper then remove from heat and let cool to a warm, spreadable consistency.
  • Heat a frying pan over medium heat with a small drizzle of olive oil.
  • Add the mushrooms and cook until their moisture has evaporated and they are lightly golden.
  • Season lightly with salt and set aside.
  • Ensure the chicken is fully cooked and lightly seasoned with salt and pepper.
  • Place a pizza stone, steel or heavy baking tray into the oven and preheat to the highest setting, ideally 250°C / 480°F for at least 30 minutes.
  • Once risen, gently punch down the dough and shape it into a round using your hands, keeping the edges slightly thicker.
  • Place the dough onto baking paper lightly dusted with flour.
  • Brush the outer edge lightly with olive oil to help it brown and crisp.
  • Sprinkle a small handful of mozzarella directly onto the dough.
  • Spread the Alfredo sauce evenly over the base, leaving a clear border around the edge.
  • Scatter the chicken and mushrooms evenly over the sauce.
  • Top with the remaining mozzarella, keeping the layer light to avoid sogginess.
  • Carefully transfer the pizza onto the hot stone or tray.
  • Bake for 12 to 15 minutes until the crust is golden, the base is crisp and the cheese is bubbling with light browning.
  • Remove from the oven and let rest for 3 to 5 minutes before slicing.
  • Finish with a sprinkle of dried oregano and chilli flakes to taste.
