  • 4 cups seedless watermelon, cut into chunks and freeze 2-4 hours
  • 2 tablespoons fresh lime juice or lemon juice
  • 1 to 2 tablespoons honey or sugar, to taste
  • 2 to 4 tablespoons cold water, only if needed for blending
  • Optional fresh mint leaves for serving

Instructions

  • Add the frozen watermelon chunks to a blender and let them sit for 1 to 2 minutes so they soften slightly.
  • Pour in the lime or lemon juice and add 1 tablespoon of honey or sugar to start.
  • Blend in short bursts until thick and slushy, stopping to scrape down the sides if needed.
  • If the mixture is too thick to blend, add cold water one tablespoon at a time until it blends smoothly but stays icy.
  • Taste and add more sweetener if needed, then blend briefly to combine.
  • Pour into glasses right away and serve immediately, adding mint if you like for extra freshness.
