This Valentines Day Drink idea is basically love at first sip, thanks to juicy red watermelon and strawberries doing all the flirting. It’s fresh, lightly sweet with a zing of lime and way easier than planning a fancy date night. One glass in and suddenly staying home feels like the right choice. This will impress anyone with its beautiful colour and refreshing taste and can be enjoyed either as a mocktail or cocktail too.

Ingredients

  • 2 heaped cups fresh watermelon, seeds removed and chopped (about 300 g / 10 oz)
  • 1 cup fresh strawberries, hulled (about 150 g / 5 oz)
  • Juice of 1 medium lime (about 2 tablespoons)
  • 1 to 2 tablespoons honey or sugar syrup, to taste
  • 1 small mint leaf or basil leaf, optional
  • 1 cup sparkling water or club soda, chilled
  • Ice cubes
  • Optional: garnish with 2 lime wedges

Instructions

  • Add the watermelon and strawberries to a blender and blend until fully smooth.
  • Pour the blended fruit through a fine sieve into a jug, using the back of a spoon to press out as much juice as possible, then discard the pulp.
  • Stir in the lime juice and honey or sugar syrup, starting with 1 tablespoon and adding more if needed.
  • If using mint or basil, gently press the leaf between your fingers to release its aroma, then add it to the jug and stir once or twice before removing it.
  • Fill two martini or cocktail glasses with ice and divide the juice evenly between them.
  • Top each glass with sparkling water or club soda and give a gentle stir.
  • To cut the lime wheel, slice the lime crosswise into thin rounds, then make a small cut from the centre to the edge so it can sit neatly on the rim of the glass.
  • Garnish each drink with a lime wheel and serve immediately.
