Ingredients

  • For the Cookies
  • 170 g (12 tbsp / 1½ sticks) unsalted butter, softened but still cool
  • 150 g (¾ cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 260 g (2 cups + 1 tbsp) plain/all purpose flour
  • 2 tbsp cornflour/cornstarch
  • ½ tsp baking powder
  • ¼ tsp fine salt
  • For the pink sugar topping (homemade option)
  • 100 g (½ cup) granulated sugar
  • 1 to 2 drops pink gel food colouring

Instructions

  • Add the butter and sugar to a bowl and mix until smooth and creamy but not fluffy. This helps the cookies keep their shape.
  • Mix in the egg and vanilla until fully combined.
  • Add the flour, cornflour, baking powder and salt. Stir just until the dough comes together and no dry spots remain.
  • Divide the dough in half, press each piece into a flat disc and chill for 20 to 30 minutes so it firms up slightly.
  • Make the pink sugar topping by placing the granulated sugar in a small bag or bowl and kneading in the gel food colouring until the colour looks even. Spread it on a plate to dry for a few minutes.
  • Roll one dough disc on a lightly floured surface to about ¼ inch thick. Cut out heart shapes and place them on a lined baking sheet.
  • Press the tops of the cookies gently into the pink sugar or sprinkle the sugar over them. If you want extra sticking power, lightly brush the cookie tops with a little water before adding the sugar.
  • Chill the shaped cookies on the baking sheet for 20 to 40 minutes so they bake with clean edges.
  • Heat the oven to 180°C (350°F).
  • Bake the cookies for 10 to 12 minutes or until the edges look set and the centres are still pale. Do not overbake or they will lose their soft texture.
  • Let the cookies cool on the baking sheet for a few minutes, then move them to a rack to cool fully.
  • Enjoy right away or store in an airtight container for several days.
