Ingredients

  • Donuts
  • 1 cup plain flour (125 g)
  • 1/3 cup granulated sugar (65 g)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup buttermilk (80 ml)
  • 1 large egg
  • 2 tablespoons melted butter (30 g), cooled
  • 1 teaspoon vanilla extract
  • Strawberry glaze
  • 1 cup fresh strawberries, finely chopped (150 g)
  • 1 teaspoon sugar
  • 1 cup icing sugar (120 g)
  • 1 to 2 tablespoons strawberry juice from the berries
  • Shortcake crumble
  • 1/4 cup plain flour (30 g)
  • 2 tablespoons sugar
  • 2 tablespoons cold butter (30 g)
  • Topping
  • 8 small fresh strawberries
  • Optional light dusting of icing sugar

Instructions

  • Heat the oven to 180°C / 350°F and lightly grease a donut pan.
  • In a bowl, mix flour, sugar, baking powder and salt until combined.
  • In another bowl, whisk buttermilk, egg, melted butter and vanilla.
  • Pour the wet mixture into the dry ingredients and gently stir just until no dry flour remains. Do not overmix.
  • Spoon or pipe the batter into the donut pan, filling each ring about three quarters full.
  • Bake for 12 to 14 minutes until the donuts spring back lightly when touched. Let cool completely.
  • Toss the chopped strawberries with 1 teaspoon sugar and set aside for 10 minutes, then press gently to release juice.
  • In a small bowl, mix icing sugar with 1 to 2 tablespoons of the strawberry juice until thick but pourable.
  • For the crumble, rub flour, sugar and cold butter together with your fingers until small crumbs form, then bake on a tray at 180°C / 350°F for 8 to 10 minutes until lightly golden. Cool fully.
  • Spoon strawberry glaze over cooled donuts, letting it drip naturally over the edges.
  • Sprinkle the shortcake crumble over the glaze before it sets.
  • Finish each donut with a fresh strawberry on top and a light dusting of icing sugar if desired.
  • Serve the same day for the best texture and flavour.
