Ingredients

  • 1 sheet all butter puff pastry (about 250 g or 9 oz), kept cold
  • 120 g strawberry jam (about 4 oz) or thick strawberry compote
  • 1 teaspoon lemon juice
  • 1 egg, beaten
  • 1 tablespoon caster sugar or coarse sugar

Instructions

  • Heat the oven to 220°C or 425°F and place a baking tray inside to warm.
  • Stir the strawberry jam with the lemon juice so it spreads easily but stays thick.
  • Lay the cold puff pastry on a lightly floured surface and cut it into 8 rectangles.
  • Add a spoonful of the strawberry filling to one side of each piece, keeping a small border clear.
  • Fold the pastry over the filling to make a neat rectangle and press the edges together with your fingers.
  • Cut a few small slits on top so steam can escape during baking.
  • Brush the tops lightly with the beaten egg.
  • Place the pastries on a piece of baking paper, then slide the paper onto the hot tray in the oven.
  • Bake for 18 to 22 minutes or until the pastries are deep golden and the filling bubbles through the slits.
  • Sprinkle with sugar while warm and let them cool for a few minutes before serving.
