Ingredients

  • For the Pies
  • 1 sheet puff pastry, thawed but kept cold
  • 120–150 g thick strawberry jam (about 1⁄2 cup)
  • 1–2 fresh strawberries, finely chopped (optional for extra texture)
  • 1 tablespoon plain flour
  • 1 tablespoon granulated sugar
  • 1 egg mixed with 1 teaspoon water (for sealing and brushing
  • Optional quick homemade filling
  • 2 cups chopped strawberries
  • 1–2 tablespoons sugar (adjust to taste)
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Instructions

  • If you want to make the homemade filling, place the chopped strawberries and sugar in a small pan and cook over medium heat until the berries release their juices. Stir in the cornstarch mixture and cook until thick and glossy, then let it cool completely.
  • Mix the flour and sugar together to make a small amount of crust dust and keep it nearby.
  • Unroll the cold puff pastry on a lightly floured surface and gently smooth it out. Keep it cold for clean cuts.
  • Use a heart-shaped metal cutter to cut as many hearts as you can from the sheet. Gather the scraps and reroll once to cut a few more.
  • Place half of the hearts on a piece of baking paper.
  • Lightly sprinkle a pinch of the crust dust in the centre of each heart to help keep the bottom crisp.
  • Add about 1 teaspoon of strawberry jam to each heart. If using fresh strawberry pieces, add only a tiny pinch so the filling stays thick.
  • Brush the edges of each filled heart with a little of the egg wash.
  • Place a second heart on top and gently press around the filling to remove any air pockets.
  • Seal the edges by pressing all around with a fork.
  • Use a small knife to cut two tiny slits on the top piece so steam can escape as they bake.
  • Brush the tops with more egg wash.
  • Place the prepared pies in the fridge for 10–15 minutes so the pastry firms up and seals well.
  • While they chill, place a baking sheet in the oven and heat it to 425°F (220°C).
  • When the pies are chilled, lift them onto the hot baking sheet.
  • Bake for 5–8 minutes, then reduce the heat to 375°F (190°C) and bake for another 10–14 minutes or until golden and puffed.
  • Let the pies cool slightly before enjoying so the filling can settle.
