Your popsicles should be left in the freezer for at least 4 to 6 hours until fully solid. For the best texture freezing overnight is even better because it gives the creamy yogurt mixture time to set nice and firm. If they still feel soft in the centre just give them a bit longer.
Yes you can use frozen strawberries or raspberries just be sure to let them thaw slightly so they blend smoothly. Frozen fruit works especially well when berries are out of season and still gives great flavour once blended and frozen again.
Adding ingredients like Greek yogurt, a bit of honey or syrup and a touch of dairy or milk helps keep them creamy and less ice-crystal hard. Too much plain water or fruit juice alone tends to freeze rock hard so balancing fruit with creaminess makes them easier to bite.
Run warm water over the outside of the mold for a few seconds, then gently pull on the stick and the popsicle should slide out easily without breaking. Leaving them at room temperature for a minute also helps release them without damage.
Sure you can, after you blend the fruit taste the mixture before freezing and add more honey, maple syrup or sugar if you want them sweeter. Keep in mind that freezing dulls sweet flavour a little so better to be a lil on the sweeter side before you pop them in the freezer.
Full fat Greek yogurt works best because it has less water and more creaminess which helps give the popsicles a richer texture and better flavour once frozen. You could use dairy free alternatives too if you need them, just know they may be slightly softer or less tangy. Out of all the batches we've made we find full fat Greek yogurt tastes the best.
If you don’t have any molds you can use small paper cups or disposable plastic cups, then freeze and insert a stick once they start to firm up. You can also wrap each finished popsicle in a small bag or foil for easy freezer storage. This is a great trick you can use anytime you need an emergency ice cream fix.
