To make great salted caramel candy you only need a handful of simple ingredients like sugar, corn syrup or golden syrup to prevent graininess, heavy cream for creaminess, good quality butter for richness, vanilla for flavour and sea salt to balance the sweetness. Using a reliable candy thermometer and a heavy bottomed pan makes a big difference in getting a smooth, consistent result every time.
The key is cooking the sugar mixture to the right temperature. Pull the candy off the heat when it reaches the “firm ball” stage around 118 °C/245 °F so it stays soft and chewy once cooled. Stir gently and avoid overcooking because even a few degrees higher will turn it firm and hard.
Most people prefer fine or flaky sea salt for these caramels because it dissolves well and adds a clean salty pop without overpowering the flavour. Flaky salt gently sprinkled on top after pouring into the pan gives little bursts of salty contrast that truly makes the treat shine.
Crystallisation from stirring too much while the sugar is melting, cooking the caramel too long so it gets hard and not using a candy thermometer are common mistakes. Using a heavy pan, warm cream and adding ingredients at the right time helps avoid grainy or burnt batches. Another mistake people make is letting the thermometer touch the bottom of their pan instead of keeping the end suspended in the candy liquid for a more accurate reading.
Wrapped individually in wax or parchment paper and kept in an airtight container at room temperature, salted caramel candy will stay good for a few weeks. You can also freeze wrapped candies in a sealed box for up to a couple of months and let them come to room temperature before enjoying.
Yes once you have the basics down you can add fun twists like a little espresso powder, a splash of bourbon after cooking or even dipping finished pieces in chocolate.
