Mix strong coffee or espresso with a little sugar then use a brush or spoon to gently drizzle it over the cooled cupcakes so they absorb the coffee without becoming soggy. This gives them that signature coffee flavour.
Yes if you prefer non-alcoholic cupcakes then you can just leave out any liqueur or replace it with more coffee or espresso for deeper flavour without changing the soaking step.
Make sure the mascarpone and cream are cold and not over-beaten, add powdered sugar and a bit of stabiliser like milk powder or whipped cream and chill briefly before piping so the frosting holds its shape.
