This viral worthy recipe for Tiramisu Cupcakes is what happens when classic Italian dessert gets an upgrade. They are soft, coffee kissed and topped with a fresh Mascarpone cream cheese frosting that makes the ladyfingers look right at home. Basically, tiramisu decided to dress up as a cupcake and it worked. We added a secret ingredient into the frosting to help you elevate the flavour while making it more stable.

Ingredients

  • Cupcakes
  • 1 ½ cups (190 g) plain flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) sugar
  • 2 large eggs, room temperature
  • ½ cup (120 ml) milk
  • 1 tsp vanilla extract
  • Coffee soak
  • ½ cup (120 ml) strong brewed coffee or espresso, cooled
  • 1 tbsp sugar
  • Mascarpone cream frosting
  • 1 cup (240 ml) cold whipping cream
  • ¾ cup (170 g) mascarpone cheese, room temperature or full fat cream cheese if mascarpone is not available
  • ⅓ cup (40 g) powdered sugar
  • 1 to 2 tbsp milk powder
  • 1 tsp vanilla extract
  • Decoration
  • Ladyfinger biscuits, cut in half
  • Fresh raspberries
  • Cocoa powder for dusting
  • Fresh mint for extra garnishing

Instructions

  • Preheat the oven to 350°F or 180°C and line a cupcake tray with paper liners.
  • In a bowl mix the flour, baking powder and salt and set aside.
  • In another bowl beat the butter and sugar until light and fluffy, then mix in the eggs one at a time followed by the vanilla.
  • Add the dry ingredients and milk in turns, mixing just until smooth.
  • Divide the batter evenly between liners and bake for 16 to 18 minutes until a toothpick comes out clean.
  • Let the cupcakes cool completely before moving on.
  • Stir the sugar into the cooled coffee, then lightly brush or spoon it over each cupcake so they are moist but not soggy.
  • In a cold bowl whip the cream to soft peaks.
  • In a separate bowl gently mix the mascarpone, powdered sugar, milk powder and vanilla until smooth.
  • Fold the whipped cream into the mascarpone mixture until fluffy and thick enough to hold its shape.
  • Chill the frosting for 10 to 15 minutes if it feels soft.
  • Pipe or spoon the frosting onto the cupcakes in generous swirls.
  • Stick a halved ladyfinger into the side of each cupcake and add a fresh raspberry and optional mint leaf on top.
  • Finish with a light dusting of cocoa powder and serve chilled or at cool room temperature.
