Ingredients

  • 190 g all purpose flour (1 1/2 cups)
  • 2 teaspoons baking powder (make sure it is fresh)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 300 ml buttermilk or milk mixed with 1 tablespoon lemon juice or vinegar (1 1/4 cups)
  • 1 large egg, room temperature
  • 45 g melted butter or neutral oil, slightly cooled (3 tablespoons)
  • 1 teaspoon vanilla extract
  • Butter or oil for the pan

Instructions

  • If using milk and lemon juice or vinegar mix them together first and set aside for 5 minutes to thicken slightly.
  • In a large bowl, gently whisk together the flour, baking powder, baking soda, salt and sugar until combined.
  • In another bowl whisk the buttermilk, egg, melted butter and vanilla until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently just until combined. The batter should look thick and slightly lumpy, not smooth.
  • Let the batter rest for 10 minutes. This helps the pancakes rise and stay fluffy.
  • Heat a non stick pan or griddle over medium heat and lightly grease it with butter or oil.
  • Scoop about 60 ml of batter per pancake (1/4 cup) onto the pan.
  • Cook until bubbles form on the surface and the edges look set, about 2 minutes.
  • Flip gently and cook for another 1 to 2 minutes until golden and cooked through.
  • Transfer to a plate and repeat with the remaining batter, lightly greasing the pan as needed.
  • Serve warm with maple syrup, honey, chocolate sauce, fresh berries, sliced bananas, whipped cream, yogurt or a dusting of icing sugar.
