A Peach Mojito is a fruity twist on the classic mojito that mixes sweet, fresh peaches with mint, lime, rum paired with a bubbly soda. The addition of peaches gives the drink extra natural sweetness and summer fruit flavour that makes it taste lighter and more refreshing than the original version.
Choose peaches that are ripe and give slightly when you press them gently because that means they are juicy and will release more flavour when muddled. Avoid peaches that are too hard or have big bruises since they won’t be as sweet or easy to mash into the drink.
If you don’t have a muddler you can use the back of a wooden spoon or a small bowl and large spoon to gently press the peaches and mint together. The goal is to release the juice from the peach and the essential oils from the mint without crushing everything into a paste.
You can adjust the sweetness by adding more or less simple syrup or sugar depending on how sweet your peaches are. If your fruits are very sweet already, start with less sugar and taste as you go so the drink stays balanced and not too sugary.
If you want a different taste you can swap club soda with sparkling water flavoured with peach or lime or even a light peach flavoured soda. Just keep in mind that sweeter mixers may make the drink sweeter overall so adjust your added sugar accordingly.
Sure you can prepare the muddled peach and mint mix ahead of time and keep it in the fridge but wait to add the rum and bubbly soda until just before serving so it stays fizzy and fresh. This makes serving easier and keeps the best texture and flavour right when your guests drink it.
