Ingredients

  • 1 ripe peach, peeled and sliced about 1 cup or 150 g
  • 8 to 10 fresh mint leaves
  • 1 tablespoon fresh lime juice about half a lime
  • 1 to 2 teaspoons simple syrup or sugar adjust to taste
  • 60 ml or 2 oz white rum
  • Ice cubes
  • Club soda or sparkling water to top up
  • Extra mint and a peach slice for garnish optional

Instructions

  • Add the peach slices and simple syrup or sugar to a sturdy glass and gently press with the back of a spoon until the peach is juicy but not mashed smooth.
  • Add the mint leaves and lightly press once or twice just enough to release the smell and flavour without crushing them.
  • Pour in the fresh lime juice and rum, then fill the glass halfway with ice and stir gently to mix everything together.
  • Add more ice to fill the glass, then top with club soda or sparkling water and give it one gentle stir.
  • Taste and adjust with a little more lime or sweetness if needed, then garnish with mint and a peach slice and serve right away.
