A Peach Bellini is a simple sparkling cocktail made by combining fresh or frozen peach purée with chilled Prosecco or other dry sparkling wine. Classic versions keep it light and fruity with just those two main ingredients though you can add a squeeze of lemon or a little sweetener if you need.
Start by peeling and blending ripe peaches into a smooth purée, then chill both the puree and the Prosecco. Spoon some of the peach purée into a chilled flute and very slowly top it with Prosecco so the bubbles stay lively, then give it a gentle stir and serve right away.
Yup you can make a delicious non-alcoholic version by swapping the Prosecco for chilled sparkling water, club soda or sparkling white grape juice. It still keeps that light 'n' fruity with a bubbly feel and you can always adjust the sweetness to your own taste.
The traditional choice is dry Prosecco which has crisp bubbles with a clean finish that pairs beautifully with peach purée but any chilled dry or extra-dry sparkling wine works well too if you prefer a slight variation in taste.
You can prepare the peach purée a day or two ahead and keep it chilled in the fridge but it’s best to add the sparkling wine just before serving so your drink stays fizzy and fresh with lively bubbles. This is how we prefer to make it for easy celebrations.
Taste your peach purée before adding the sparkling wine and add a little sugar, honey or lemon juice if you want it sweeter or more balanced but if your peaches are ripe you might not need anything extra at all.
