Ingredients

  • 2 ciabatta rolls or thick panini bread, sliced in half
  • 1 cooked chicken breast, thinly sliced (about 200 g or 7 oz)
  • 1 medium tomato
  • 120 g or 4 oz mozzarella or provolone cheese, sliced or grated
  • 2 tablespoons mayonnaise
  • 1 to 2 tablespoons fresh coriander, finely chopped
  • Salt and black pepper, to taste
  • 1 tablespoon butter or olive oil for grilling

Instructions

  • Slice the tomato in half, scoop out and discard the watery seeds and centre, then slice the firm flesh thinly and set aside.
  • Lightly season the chicken with salt and pepper and make sure it is sliced thin so it heats through easily.
  • Spread a thin, even layer of mayonnaise on the cut sides of all bread pieces.
  • Place a layer of cheese directly onto the bottom bread halves so it sits between the bread and the fillings.
  • Add the chicken on top of the cheese followed by the tomato slices, then sprinkle over the fresh coriander.
  • Finish with another light layer of cheese and close the sandwich with the top bread halves.
  • Brush or lightly butter the outside of the bread on both sides.
  • Heat a panini press or frying pan over medium heat until hot then cook the sandwich, pressing gently for 3 to 4 minutes per side until golden, crisp and the cheese is fully melted.
  • Remove from the heat, rest for a minute then slice and serve warm ideally with french fries on the side.
