On a hot day these Ice Cream Cookie Sandwiches will melt hearts. A totally fun way to celebrate a beautiful summers day with your family and friends and cool down in style. We created a lush home made Vanilla ice cream base for this dessert idea and sandwiched them between soft chewy cookies with all our top tips as always on how to make this summer treat turn out bakery style.

Ingredients

  • Cookies
  • 115 g (½ cup) unsalted butter, softened
  • 100 g (½ cup packed) light brown sugar
  • 50 g (¼ cup) white sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 180 g (1½ cups) plain flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • Filling
  • 700 g (about 3 cups) premium vanilla ice cream
  • Optional edges
  • 80 g (½ cup) rainbow sprinkles or mini chocolate chips

Instructions

  • Line a baking tray with parchment paper and set aside.
  • Beat the butter and both sugars together until smooth and creamy.
  • Mix in the egg yolk and vanilla until fully combined.
  • Stir in the flour, baking soda and salt just until a soft dough forms.
  • Scoop or roll the dough into 12 even balls, place on the tray and gently flatten slightly.
  • Bake at 175°C / 350°F for 10–12 minutes until set on the edges but still soft in the centre.
  • Let the cookies cool completely, then place them in the freezer for 20 minutes to firm up.
  • While the cookies chill, line a shallow tray or tin with parchment paper and spread the ice cream evenly to about 2.5 cm / 1 inch thick.
  • Freeze the ice cream until very firm, at least 2 hours or until it feels solid.
  • Using a round metal cookie cutter the same size as the cookies, cut out ice cream rounds and return them to the freezer immediately.
  • Place one chilled cookie flat side up, top with a frozen ice cream round, then gently press another cookie on top.
  • Roll the exposed ice cream edge in sprinkles or chocolate chips if using, working quickly.
  • Place assembled sandwiches back into the freezer for at least 1 hour so they set firmly.
  • Wrap individually or store in an airtight container until ready to serve.
