To make perfect ice cream cookie sandwiches, bake soft, chewy cookies and let them cool completely, then use a firm ice cream that has been frozen solid and cut into discs using a round cutter. Press the ice cream between two cookies, roll the edges in sprinkles or toppings and freeze the assembled sandwiches for at least a couple of hours so they hold their shape and taste great. This method keeps the cookies from breaking and stops the ice cream from melting too quickly while you work.
Soft, chewy cookies like chocolate chip, sugar or oatmeal versions are the best choice because they bend a little when you bite into them instead of cracking and pushing the ice cream out. Crisp cookies can become hard in the freezer and lead to an unpleasant texture, so choosing a tender and slightly under-baked centre is key.
