This high protein breakfast recipe almost feels like cheating! It packs just under 50 grams of protein to help you kickstart your day with fat burning nutrition, while keeping you feeling satisfied and ready to go. We’ve tweaked the traditional English Breakfast to boost the protein for anyone looking to lose weight while keeping it yummy.

Ingredients

  • 2 whole eggs
  • 100g firm tofu (half a 200g block)
  • 1 tbsp nutritional yeast (optional but recommended for flavour)
  • 1/4 tsp turmeric
  • Salt and pepper to taste
  • 1 tsp olive oil
  • 4–5 small mushrooms, sliced
  • 1 garlic clove, minced
  • 1 slice of wholemeal bread
  • 1–2 tbsp homemade hummus
  • 1 sausage (regular or vegetarian, your choice)
  • 1/3 of a 400g can of baked beans (approx. 130g)

Instructions

  • Crumble the tofu into a bowl using your hands or a fork until it has a scrambled egg-like texture.
  • Whisk the eggs in a separate bowl and season lightly.
  • Heat a non-stick pan over medium heat with half the olive oil, add the mushrooms and garlic, stir-fry until browned and softened (about 5–6 minutes).
  • While mushrooms are cooking, heat another pan with a bit of oil, add the sausage and cook according to package instructions (usually 6–8 minutes, turning occasionally).
  • Once mushrooms are done, transfer them to the plate and use the same pan to heat the baked beans over medium heat for about 4 minutes, stirring occasionally.
  • Meanwhile, toast the slice of wholemeal bread, cut into two triangles, and spread with hummus while warm.
  • In the second pan, once the sausage is nearly done, push it to the side and add the crumbled tofu with turmeric, nutritional yeast, salt, and pepper. Stir for 1–2 minutes, then pour in the whisked eggs and gently scramble everything together until cooked through but soft.
  • Serve everything together on a plate and enjoy your high protein breakfast.
