Ingredients

  • For the Greek Yogurt Dill Spread
  • 200 g (¾ cup) thick Greek yogurt
  • 1 small garlic clove, finely grated or minced
  • 1 tbsp fresh dill, finely chopped (or 1 tsp dried dill)
  • 1 tsp lemon juice
  • Salt and black pepper, to taste
  • For the Smoked Salmon Bagels
  • 2 bagels, sliced in half
  • 100 g (3.5 oz) smoked salmon slices
  • ½ cucumber, thinly sliced
  • For the Egg and Spinach Bagels (veg option)
  • 2 bagels, sliced in half
  • 4 eggs (or 6 egg whites, or a mix)
  • 1 small handful fresh spinach leaves
  • ½ cucumber, thinly sliced
  • 1 tsp olive oil or butter for cooking

Instructions

  • In a bowl, mix the Greek yogurt with garlic, dill, lemon juice, salt, and pepper until smooth. Taste and adjust seasoning if needed. Set aside.
  • Slice the bagels in half and lightly toast them cut-side up until just golden, about 2–3 minutes in a toaster or under the grill. This keeps the outside crisp while the inside stays chewy.
  • For the smoked salmon version, lightly toast the bagels if you like. Spread each half generously with the dill yogurt spread. Layer with smoked salmon and thin cucumber slices. Press the top half gently on and serve.
  • For the egg and spinach version, heat olive oil or butter in a pan over medium heat. Crack in the eggs, season with salt and pepper, and scramble gently until just set. If using egg whites only, cook until fluffy but not dry.
  • Spread the toasted bagels with the dill yogurt mixture. Add a layer of spinach, followed by the scrambled eggs, then top with cucumber slices. Close the bagel and serve warm.
