Ingredients

  • For the brownie batter
  • 200 g (7 oz) dark chocolate (60–70%), chopped
  • 150 g (2/3 cup) unsalted butter
  • 200 g (1 cup) soft brown sugar
  • 100 g (1/2 cup) caster sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 125 g (1 cup) plain flour (all-purpose)
  • 30 g (1/4 cup) cocoa powder
  • Pinch of salt
  • 1 tsp instant espresso powder (optional, for depth)
  • Zest of 1 large orange
  • For the orange swirl
  • 200 g (7 oz) cream cheese, softened
  • 60 g (1/4 cup) caster sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • Zest of 1 small orange
  • 1–2 drops orange extract (optional, for stronger flavour)
  • Orange gel food colouring (start with a small amount for vibrant colour)

Instructions

  • Preheat the oven to 180°C (350°F). Line a 20 cm (8 in) square tin with baking paper, leaving some overhang on the sides for easy lifting.
  • In a heatproof bowl set over a pan of simmering water, melt the chocolate and butter together until smooth. Let it cool slightly.
  • Whisk in the brown sugar and caster sugar until glossy. Add the eggs one at a time, then stir in the vanilla and orange zest.
  • Sift in the flour, cocoa powder, salt, and espresso powder. Fold gently until just combined and smooth. Do not overmix.
  • In a separate bowl, beat the cream cheese with the sugar until smooth. Add the egg yolk, vanilla, orange zest, and a touch of orange extract if using. Mix well, then stir in orange gel colouring until you reach the shade you want.
  • Pour half of the brownie batter into the prepared tin and spread evenly. Drop spoonful’s of the orange mixture across the surface. Pour over the remaining brownie batter and spread gently. Add more spoonful’s of orange mixture on top.
  • Use a skewer or thin knife to gently swirl the orange through the chocolate in random patterns. Do not over swirl or the colours will blend too much.
  • Place the tin in the fridge for 15 minutes before baking. This helps the swirls keep their shape.
  • Bake in the preheated oven for 30–35 minutes, until the edges are set but the centre is still slightly fudgy. A toothpick should come out with a few moist crumbs, not wet batter.
  • Let the brownies cool completely in the tin, then lift out using the baking paper. Slice into 16 squares with a sharp knife, wiping between cuts for clean edges.
