Use a cream cheese swirl coloured with gel food colouring rather than liquid colour so you get vivid orange without thinning the mixture. Drop spoonful's of the orange cream cheese onto the brownie batter and drag a skewer or chopstick through gently to make bold swirls, then chill the tin for 15 to 20 minutes before baking so the pattern holds better in the oven.
Fresh orange zest and a little fresh orange juice are the most reliable way to get natural orange aroma and bright citrus notes. If you want extra punch use a tiny amount of high quality orange extract sparingly, but rely mostly on zest so the chocolate orange balance feels natural.
Too much liquid or using water based colour can make colours run into the chocolate. Use concentrated gel food colouring, avoid over swirling, and do not add extra juice into the swirl; letting the coloured cream cheese rest a little before swirling also helps the colour develop and stabilise. Adding a small white base to the colour can also reduce bleeding in very wet mixes.
Use a rich, slightly under-baked fudgy brownie base and bake at the right temperature so edges set while the center stays fudgy. A reliable test is a toothpick that comes out with moist crumbs not raw batter; avoid adding extra liquid to the swirl and let the pan cool completely before slicing for clean squares.
Use good quality dark chocolate or a mix of dark and semi sweet so the chocolate stands up to citrus. Add a little brown sugar or a pinch of espresso powder to deepen the chocolate notes, and be generous with fresh orange zest so the tart bright top notes cut through the richness.
Store cooled brownies in an airtight container at room temperature for up to two days or in the fridge for up to a week. For colour and texture, do not freeze cream cheese swirls if you can avoid it since thawing can blur the pattern; if you must make ahead, bake the brownies and add a quick fresh cream cheese swirl on the day you serve.
