Ingredients

  • 2 kg Yukon Gold potatoes (about 4 to 4.5 lbs), peeled or halved
  • 1 whole head of garlic
  • 75 to 120 g unsalted butter (6 to 8 tbsp), warmed
  • 150 to 200 ml heavy cream or whole milk (about ⅔ to ¾ cup), warmed
  • 2 to 3 tbsp sour cream or cream cheese (optional for extra creaminess)
  • Salt and black pepper to taste
  • Chopped chives or grated parmesan (optional for serving)

Instructions

  • Heat the oven to 200°C or 400°F, slice the top off the garlic head, drizzle with a little oil, wrap in foil, and roast for 35 to 45 minutes until soft.
  • Place the potatoes in a large pot, cover with cold salted water, and bring to a gentle simmer until the potatoes are tender when poked with a knife.
  • Drain the potatoes well, return them to the warm pot, and let them sit for a minute so any extra moisture can steam away.
  • Mash the potatoes using a masher, ricer, or food mill until smooth, taking care not to overwork them.
  • Squeeze the roasted garlic cloves from their skins and add them to the potatoes.
  • Slowly pour in the warm butter and warm cream or milk, folding gently until the potatoes reach the texture you like.
  • Stir in the sour cream or cream cheese if using, then season with salt and pepper to taste.
  • Serve warm, topped with a little extra butter, chives, or parmesan if you like.
