This Garlic Butter Mushrooms recipe is a simple but seriously tasty way to bring big flavour to your table. Juicy mushrooms are cooked in golden, garlicky butter until they’re tender and full of rich, savoury goodness. It’s the kind of easy dish that feels a little fancy but takes hardly any time. Perfect as a side or a snack, these buttery mushrooms are bound to be a favourite.

Ingredients

  • 500g White Button Mushrooms
  • 1 Red Onion
  • 2 1/2 tbsp Extra Virgin Olive Oil
  • 4 Garlic Cloves
  • 1/2 Lemon Juice Squeezed
  • 3 tsp Unsalted Butter
  • 1/2 tsp Sea Salt
  • Handful Fresh Parsley
  • 4 Rosemary and Thyme stalks
  • 1/2 tsp Black Pepper Powder

Instructions

  • First let’s turn the Mushrooms upside down and cut them into quarters or 6 pieces if they are a bigger size. We’re going to use Red Onions finely chopped for this delicious recipe because they are quicker to cook compared to White Onions. Grab a good non-stick pan and drizzle in some Olive Oil and get it heated to about 365° F or 185° C.
  • Drop in the chopped Button Mushrooms into your pan on a medium-high heat. Allow the Mushrooms to cook out until they are nicely golden brown in colour. Just be sure to keep them moving around on the pan so they cook evenly. Sprinkle on some Sea Salt along with some cracked Black Pepper to allow them to release the excess water from inside.
  • Drizzle on some more Olive Oil onto the Mushrooms to allow them to cook better and develop some more colour. Continue to sauté them and keep moving them around every now and again. Give them a few short minutes to cook out properly before we start adding in the Onions and Garlic. If we add in the Garlic too early like most people do you’ll risk burning the Garlic.
  • Once they all have a beautiful golden brown colour to them, it’s time to add in the chopped Red Onion. Sprinkle in some fresh Thyme and Rosemary a minute after the Onions. If you have dried herbs only, that’s fine but just remember to use a little less.
  • Now it’s time to add in our chopped Garlic. Drizzle in some more Olive Oil at this point followed by the freshly squeezed Lemon juice. The acidity from the Lemons will help balance the savoury flavour of the dish. You can reduce the heat down to a low medium at this point to avoid burning anything.
  • Sprinkle in the freshly chopped Parsley at this point. Now is the perfect time to grate and add in some grated Lemon zest into your Mushrooms for an extra zing to help enhance the flavour. Be sure to use Organic Lemons for this though. Around 1/5th to 1/6th of the Lemon zest grated into the pan should do perfectly fine.
  • To finish off this dish we’ll add in the few small teaspoon’s of Unsalted Butter which will really deepen the flavour of these amazing Mushrooms. Once the Butters melted in nicely, it’s time to turn off the heat and serve. Grate in a little more Lemon zest onto the Mushrooms once you’ve put them into a tray, garnish with a sprinkle of fresh Parsley and enjoy. Don’t forget to share this with your friends and family!
