Ingredients

  • 2 medium ripe pineapples
  • 2.5 to 3 cups cooked long grain rice, cold and ideally made the day before
  • 2 tablespoons vegetable or sunflower oil
  • 200 g or 7 oz raw shrimp, peeled and deveined
  • or 1.25 cups mushrooms, cut into small pieces for a veggie option
  • 1 clove garlic, finely chopped
  • 1 small onion or 2 spring onions (white part only), finely chopped
  • 0.5 teaspoon ground turmeric
  • 2 large eggs, lightly beaten
  • 0.75 to 1 cup pineapple flesh, finely chopped (from the pineapples)
  • 2 to 2.5 tablespoons light soy sauce, to taste
  • 0.5 teaspoon sugar
  • A pinch of MSG, optional but recommended
  • A small drizzle of sesame oil
  • Salt and black pepper, to taste
  • Chopped spring onion greens or fresh coriander, for garnish

Instructions

  • Cut each pineapple in half lengthways, keeping the leaves on and carefully scoop out the flesh to create two pineapple bowls. Chop the flesh finely, measure out the amount needed, and set aside.
  • Heat a large frying pan or wok on medium high heat and add 1 tablespoon of the oil.
  • If using shrimp, pat them dry, add to the pan in a single layer, season lightly with salt and pepper and cook for about 1 to 2 minutes per side until just pink and firm then remove and set aside.
  • If using mushrooms, add them to the hot oil instead, season lightly with salt and cook for 4 to 5 minutes until their moisture cooks off and they turn lightly golden, then remove and set aside.
  • Add the remaining oil to the pan, then add the garlic and onion or spring onion whites and cook for about 30 seconds until fragrant.
  • Sprinkle in the turmeric and stir it into the oil so it releases its colour and turns the base a warm yellow.
  • Add the cold rice and spread it out in the pan, letting it sit untouched for about 20 to 30 seconds before stirring so it can fry rather than steam.
  • Push the rice to the side, pour the eggs into the empty space and gently stir until just set, then mix into the rice.
  • Add the chopped pineapple, soy sauce, sugar and a pinch of MSG if using, then return the shrimp or mushrooms to the pan and stir everything together.
  • Cook for another 2 to 3 minutes until everything is hot, evenly mixed and lightly glossy without being wet.
  • Turn off the heat, drizzle over the sesame oil, taste and adjust seasoning if needed.
  • Spoon the fried rice evenly into the pineapple shells, pressing gently so each one is filled right to the top.
  • Finish with spring onion greens or fresh coriander and serve straight away.
