Ingredients

  • 1 medium baguette (about 250–300g / 9–10 oz), cut lengthways
  • 2 tbsp olive oil or melted butter
  • 1 small garlic clove, finely chopped or grated
  • 150g / 1½ cups shredded low-moisture mozzarella
  • 2 tbsp grated Parmesan (optional for extra flavour)
  • 120g / ½ cup thick pizza sauce or passata
  • ½ medium courgette (zucchini), sliced thinly
  • ½ medium aubergine (eggplant), sliced into thin half-moons
  • 1 small red pepper, sliced
  • 1 medium tomato, sliced
  • 150g / 5 oz cooked chicken pieces (or leftover roast chicken)
  • Small sprigs of fresh thyme or parsley for topping
  • Salt and pepper to taste

Instructions

  • Heat the oven to 220°C / 425°F.
  • Slice the baguette in half lengthways. If the inside is very airy, gently press the crumb with your hand to flatten it a little so toppings sit evenly.
  • Place the halves cut side up on a baking tray and toast in the oven for 4–5 minutes until just dry on the surface.
  • Mix the olive oil or melted butter with the garlic and brush over the cut side of the baguette.
  • Sprinkle a thin layer of mozzarella directly on the bread. Bake for 2 minutes until just starting to melt – this stops the sauce making it soggy.
  • Spread the pizza sauce in a thin layer over the cheese.
  • Add the cooked chicken, then scatter the courgette, aubergine, and red pepper slices. Keep the pieces light so the bread doesn’t steam.
  • Top with the rest of the mozzarella, a sprinkle of Parmesan, and finish with slices of tomato.
  • Bake for 8–10 minutes until the cheese is melted and the edges of the bread are crisp.
  • Switch the oven to grill/broil and cook for 1–2 minutes more until the cheese is bubbling and golden.
  • Remove from the oven, rest for 2 minutes, then finish with a pinch of salt, pepper, and fresh thyme or parsley.
  • Slice into portions and serve warm. Enjoy!
