Ingredients

  • 60 ml (2 oz) dark rum
  • 120 ml (4 oz) spicy ginger beer, well chilled
  • 15 ml (1 tbsp / ½ oz) fresh lime juice
  • 1 to 2 dashes Angostura bitters (optional but recommended)
  • Ice cubes
  • 1 lime wedge for garnish

Instructions

  • Fill a tall glass with plenty of ice so the drink stays very cold.
  • Pour the fresh lime juice over the ice.
  • Add the chilled ginger beer and give it a gentle stir to mix with the lime.
  • Slowly pour the dark rum over the top of the drink so it floats on the surface and creates the dark stormy layer. Pouring it over the back of a spoon helps keep the layers visible.
  • Add one or two dashes of bitters if using.
  • Garnish with a lime wedge on the rim or on a cocktail pick.
  • Give the drink a light stir just before drinking and enjoy.
