Chocolate chia seed pudding is a simple recipe made by soaking chia seeds in milk and cocoa until the seeds swell and create a creamy, thick texture. It’s often sweetened and chilled so it tastes like a rich dessert or breakfast that feels indulgent but is packed with fiber and healthy fats.
To get the best texture you need to mix your milk, cocoa, sweetener and chia seeds really well, stir again after a few minutes to avoid clumps and then chill in the fridge for at least 2-4 hours or overnight so the seeds fully absorb the liquid.
