Chili soup has more liquid and a thinner consistency than traditional chili so it feels more like a hearty soup. Chili is usually thicker and heavier while chili soup lets the broth shine with beans, meat and spices in every spoonful.
The basics are ground meat (like beef or turkey), beans (like kidney beans), onions and garlic, tomatoes, chili powder and cumin. These core items give you rich flavour and texture while you can add broth, optional veggies or more spices from there.
Browning the meat and onions first adds deep flavour and then letting the soup simmer slowly brings out the spices and makes everything meld together. Tasting and adjusting with salt, a splash of vinegar or fresh lime at the end will punch up the final bowl.
Sure you can easily switch ground beef for turkey or chicken, use black beans instead of kidney beans or trade diced tomatoes for crushed tomatoes based on what you have on hand. Just keep the balance of protein, liquid and spices so the soup still tastes rich and satisfying.
Letting it simmer uncovered on low heat helps reduce the liquid naturally and makes it thicker. You can also mash a few beans in the pot or stir in a small spoon of cornmeal toward the end to give it body without changing the flavour.
Cool the soup within a couple of hours then keep it in an airtight container in the fridge for up to four days. If you want to save it longer, freeze it in freezer safe containers for up to three months and reheat gently on the stove or in the microwave.
